A Great Sangria Recipe

If you go to Spain, you have to try a traditional Sangria. When in Rome, they say, so as the Romans do, and this popular and traditional drink is available at just about every bar and restaurant. Each place may have their own variation of the recipe, so it is fun to try it at different locations and compare. Sometimes the recipe is changed to go with the type of food that is being served.

Sangria is considered a summer drink, and you will find it served primarily during the summer when you are in the northern part of Spain, but in the south, where it is endless summer, you will find it served all year long. The mild temperatures of the fall, winter and spring encourage drinking this refreshing, fruity drink. The string of the sangria you will encounter will vary from place to place. Bars will most likely serve a stronger concoction than will a dance club.

Sangria itself originated in Spain. The word is the Spanish word for bleeding, and so it gets its name from the color of the red wine that is used in making traditional sangria. There are variations today that use white wine instead, but they are called sangria blanca.

The basic sangria recipe is red wine, juice, club soda and fruit. A young red wine is the best one to use, and the ingredients should all be of good quality, so choose a good wine and fresh juices and fruit.

The sangria you will be served in a restaurant or bar is traditionally served in a one liter pitcher. The pitcher has a strainer on the lid so the fruit and ice can be filtered out when the drink is poured. Sangria is available by the glass serving, but by the pitcher is the more usual way it is served. However, at a large party, you will find sangria served in a large punch bowl, with the fruit floating on top in a lovely manner. How to make your own sangria: Pour together the following: one bottle of red wine, two cups of orange juice, one half cup of triple sec or brandy, and sliced oranges. Let stand for a while, then stir in ice and two cups of club soda.

You can change the fruit or the wine in a sangria recipe, and if you prefer to have a wine drink that goes better with light foods, you may prefer sangria blanca. Another variation is to use sparking white wine.

You have to let the flavor of the fruits blend in with the other ingredients, so this drink should be made a few hours ahead of time, or even the night before. When you are ready to serve, add the club soda and ice. Of course, you can adjust the ingredients to suit your own taste, such as using lemons in addition to oranges, or substituting pineapple. If you try different combinations of fruit, juice and perhaps flavored sodas, you will come up with an interesting group of recipes you can serve for different occasions.

What Should You Include in Your Low Fat Dinners?

If you are looking for ways to lose weight and develop greater stamina, adopting a low fat diet could definitely help you out. This means choosing meals that are healthier alternatives to the traditional calorie-ridden foods. But where should you start? We've put together some ideas that will help you prepare low fat dinners and take control of your life. Let's look at the different food groups.

Grains group

There are several possibilities for you in the grains group. Any good low fat cookbooks will tell you that normal white bread should be replaced with whole-grain bread, rolls or bagels. If you are a huge fan of white bread, I suggest that you try out whole wheat bread for a month. Just try it out. You'll see how easily our body gets accustomed to change.

Whole-grain cereals like bran and oatmeal should be a part of your snacks. Switching from plain noodles and pasta to whole-grain pasta is also an easy change to make. Your spaghetti won't taste that different with whole-grain pasta, but the effect on your health will be felt. Buy also brown rice. If you are reluctant, you can always alternate: white rice one month and brown rice the other. Although your diet won't be perfectly, it will be much better than before. If you want a healthier snack, trade your granola for a low-fat one or cooked oatmeal.

Fruits and vegetables

And when you're thinking about your menu for the week, don't forget about vegetables. Veggies should form a crucial part of your low fat dinners. Don't add too much cream or sauces though. Otherwise, you'll end up with big fat veggies in your plate.

Think about integrating fruits and vegetables, such as apples, peaches, pears, watermelons, peas, chick peas, soy beans, and broccoli into your low fat dinners. Keep in mind that you don't have to add a whole apple tree to your recipe to make a difference. Some low fat cookbooks offer interesting dessert recipes using pureed fruits instead of oil. Frozen fruits with no added sugar also make up a great low fat snack.

Meat and poultry

Your best options will always be lean cuts of meat over regular ones. Chicken and turkey are great. Cooking them without their skin will result in an even lower fat percentage in your meals. If you cannot live without hot dogs, choose chicken or turkey sausages instead of beef. Fish is a healthy source of good fat and omega 3 (especially salmon). In general, North Americans do not eat enough fish. For those who don't like fish, it may be because you have never had the chance to taste a delicious recipe. Preparation is the secret.

Dairy Products

Regarding dairy items, you can sometimes cook only with the egg whites instead of the whole egg. Many recipes based on egg whites are available in low fat cookbooks. And the final result tastes just as great. Moreover, make sure that you include skimmed or reduced-fat milk rather than whole milk in your low fat snack. Lighter versions of butter and margarine should be substituted in place of regular butter. Here again, you can alternate between the lighter and the regular versions of milk or butter that you are used to eat. This will still make your diet much better than it was.

Desserts

We know that dessert is not a new food group. But we thought that it was important to touch on it since so many of us love finishing their meal with one. For instance, you can have low fat versions of muffins and scones. You can also bake Angel food cakes or gingerbread cakes instead of pound cakes/chocolate cakes. Using skimmed milk will equally improve your puddings and custards. Your ice cream treat can easily be replaced by sorbet and frozen yogurt.

A low fat diet does not mean you have to refrain from eating dessert. However, you may have to rely on good low fat cookbooks to get the tips and techniques necessary to prepare delicious and healthy desserts. In the meantime, we hope that above-mentioned tips will help you to get started on the road to a slimmer and better you.

Sauces and Marinades - My 3 Favorite Barbeque Recipes

Summer time is here and it is time to get out your grill, fire up the briquettes, dust off your apron, and get out in the sunshine. Lazy summer days are just made to get together with friends and family (or people you just want to make jealous with your barbequing skills) and savor the tastes and smells of a charcoal grill. And with so much barbequing going on, it's no surprise that so many outdoor cooks find themselves on a never-ending quest for the perfect barbeque recipe that will dazzle their friends and family (and nosey neighbors!) each summer.

While most professional (or dedicated amateur) BBQers insist that the flavor of real barbeque is all in the rub and the fire, the easiest ways to add a ton of flavor to your barbeque recipes is with marinades and sauces. These can vary so hugely in flavor and ingredients that it can be hard to recognize them as the same thing! Read on for a few of my favorite barbeque sauce and barbeque marinade recipes.

Easy BBQ Sauce

The first tasty BBQ recipe you'll find below is just about the easiest thing you'll ever make-- and it's overflowing with flavor. This is such an easy barbeque recipe that it can be whipped up in the kitchen in just a few minutes-- no waiting necessary. And no cooking, either. Just toss it all into a jar the day you're planning to cook, let it sit in the fridge for awhile, and you're ready to go.

Ingredients:
2 small cans of tomato sauce
3/4 cup brown sugar
2 tbsp. apple cider vinegar
1/4 cup molasses
1 tbsp. Worcestershire sauce
1 tbsp. mustard (not dry)
1 tsp. seasoning salt
1 tsp. garlic powder (not garlic salt)
1/2 tsp. onion powder
1/4 tsp. crushed red chilies (optional)

Instructions:The morning before you're scheduled to barbeque, mix all ingredients together in a jar and let sit for 1 hour to blend the flavors. Brush on sauce as meat is cooking over hot coals or a grill. Keep basting meat as it cooks, and as you turn it over.

Teriyaki BBQ Marinade

If you love the way chicken tastes on the BBQ, you're going to love this barbeque recipe. It's sweet, salty, sticky, and the perfect thing to flavor your BBQ chicken or pork. Or beef, for that matter.

Ingredients:
3/4 cup Soy Sauce
1/2 cup Sherry or White Wine
3 tbsp. brown sugar
2 cloves garlic, minced
1 tsp. grated fresh ginger (or powdered)

Instructions: Mix all ingredients together. Place meat of your choice in a 13x9 inch glass casserole dish. Pour marinade over meat and let stand in the fridge for a minimum of 2 hours. Discard marinade. Cook the marinated meat over hot coals or a gas grill for 6-7 minutes each side.

Raspberry BBQ Chicken Marinade

Lots of meats on the BBQ have tons of flavor on their own. Chicken, on the other hand, isn't quite as flavorful and tends to dry out. Which is why it's my favorite meat to marinade. This marinade is easy to make, tastes wonderful, and is elegant and special. Garnish this barbeque recipe with fresh raspberries and serve with a raspberry mustard.

Ingredients:
1/4 cup Raspberry Vinegar or Raspberry Vinaigrette
1/4 cup olive oil
1/4 cup fresh raspberries
3 cloves of garlic, minced
1 tsp. sugar
1 tsp. Sea Salt
1/4 tsp. white pepper

Instructions: Mix all ingredients in a blender. Place 1 whole cut up chicken in a large plastic zip lock baggie. Pour marinade over meat and let stand in refrigerator for 8 hours. Discard marinade. Cook meat over hot coals or a gas grill until no longer pink inside. This barbeque recipe is also great with pork!

Boston's Bay Village Restaurants - Top Gourmet Dining Choices Near Boston's Theatre District

Bay Village may be Boston's smallest neighborhood but its location next to the Boston Theatre District means that Bay Village restaurants are top choices for before-show dinners and after-show drinks, as well as fine dining on any other occasion.  You'll find one of the city's best French restaurants, a top steakhouse located in a castle, a couple of highly regarded Italian restaurants, and a couple of more casual choices tucked away in this conveniently-located neighborhood.  Here are two mouth-watering options to consider.

Pigalle (75 Charles Street South, next to Radisson Hotel) is a long-time favorite with theater-goers.  This award-winning French restaurant specializes in using the freshest local ingredients to prepare classic French cuisine.  Chef Marc Orfaly offers an a la carte menu with daily specials, as well as several other options: a 3-course prix-fixe menu, a casual bar and patio menu featuring $1 oysters on the half shell plus many other yummy items, and special chef's tasting menus, with and without wine pairings.  On Wednesdays, there's even a "kitchen vs. bar battle" that pits 3 tastes from the kitchen against 3 drinks from the bar - this may be a battle, but it's also a win-win!

What should you try here?  For starters, think about the spiced carrot soup with calamari and a touch of chorizo, or the arugula salad with fried goat cheese fritters.  The crabcakes, and the charcuterie platters are also wonderful.  Plus Pigalle makes some of Boston's best French onion soup with fabulous 4-cheese croutons. 

For main courses, consider the crispy comfit duck with herb spatzle and creamed Brussels sprouts, or the halibut baked in a flaky crust with creamed artichokes and jasmine rice.  You can also get a riff on the classic French steak-frites - at Pigalle, it's a juicy flank steak with peppers, French fries, and creamed spinach.

Dessert choices at Pigalle also run to the classics - creme brulee, a pineapple tart with mascarpone pastry cream and chocolate sorbet, a cheese platter, and other tempting daily specials.

Erbaluce (69 Church Street) is the newest of the Bay Village restaurants, and Boston diners are quickly becoming addicted to Chef Charles Draghi's Piedmontese Italian cuisine.  Named for an Italian grape, the restaurant features dishes that are flavored with herbs, fruit and vegetable essences, and cooking techniques such as roasting that bring out the flavor of each dish - no heavy creams or sauces here! 

The menu changes a few times each week, depending on what's in season and freshest in the markets.  You'll find organic meats and produce, plus dishes based on game such as wild boar that you don't usually find in restaurants.  One of my favorites is the spaghetti with clams in fennel-tomato broth with bottarga, a pressed block of cure tuna or mullet roe that's shaved on top of the pasta, giving it an incredibly buttery, sort of caviar-like flavor - try this and you'll immediately start planning your next visit to Erbaluce. 

With even more Bay Village restaurants to try in nearby streets, you may decide to skip the theater and just concentrate on eating.  Be sure to walk around Bay Village afterwards to admire the early 19th century Federal architecture and work off all those calories!

3cups milk

2 3/4 cups sugar

3/4 teaspoon salt

3 cups half and half

2 tablespoons vanilla extract or 1 vanilla pod

6 cups whipping cream

Preparation:

Bring milk to a boil with the vanilla pod (If you are using the vanilla). Remove from heat; add sugar and salt, stir until dissolved. Stir in half and half, vanilla extract and whipping cream. Cover and refrigerate. Freeze according to manufacturer's instructions or see on ice cream maker.

The treat portion of my answer to Mshorselover8's question on what I feed my macaw. My cockatiels will eat some of these things, so if you have other birds, let them try them as well! Mentioned in the vid and others I forgot: -In-shell peanuts, roasted, unsalted (3-4 at a time hidden in toys) -in-shell almonds (2-3 at a time hidden in toys) -Raw in-shell sunflower seeds (no more than 1tb. a day for going home treats if I need to leave during the day or to put him in his cage at night). -banana coins (about 5 sliced at 1/4" to hide in toys) -cherry (diced to reduce waste, otherwise he drops it on the floor. goes in dish. at least remove pit, if you don't do anything else, pit has cyanide) -orange (cut into small wedges and halved horizontally. usually goes in dish) -apples (also cut in wedges and halved for his dish) -grapes (quartered and de-seeded for his dish) -grapefruit (offered pieces as I was eating with him) -melons (he loves watermelon!) -pear -peach -nectarine -chicken drumstick bones (make sure it's cooked thoroughly. we use organic free range chicken which have denser bones and he gets a little more challenge from those. He cracks them open for the marrow. Turkey bones seem to give him enough trouble that he won't bother too much with them) -cooked potato -broccoli -carrot (sometimes he'll eat them, sometimes he won't) -cooked pasta I also give him popsicle sticks from sorbet popsicles and leave just a tiny dribble left on the stick for him to taste and then he ...

Small Changes Yield Big Results

Over 60% of Americans are now obese or morbidly obese. This is a terrifying number and yet it could be drastically reduced if we all made a few small changes to our way of eating. I am not talking about starvation diets or drastic surgical procedures, merely being more aware of what we are putting into our bodies and making a few modifications here and there.

It goes without saying that we should avoid fast food at all costs. It is just plain bad for you. Even their best attempts at "healthy options" are loaded with fat. The salad may look okay but the copious amounts of dressing that it happily swims in is a recipe for disaster. The same applies to soda. It is nothing more than water, sugar and bubbles, it's bad for both the waistline and the teeth, so don't drink it.

We can, however, make a significant difference in our diet by making a few small changes. Substitution and modification are the key to success here. Here is an example of something that I do every time I go to Starbucks. I like the white chocolate mocha, now a regular tall with whipped cream has 420 calories and a whopping 20 grams of fat. I order a tall, non-fat, no whipped with half syrup. Non-fat saves 120 calories and 10 grams of fat, no whipped saves 100 calories and 5 grams of fat and half syrup saves 40 calories and 5 grams of fat. So MY version has 160 calories and zero fat, and it tastes great. I usually get this once a month or so.

This can be applied to most things that we eat or drink, it just requires a bit of effort on our part. here are a few simple ideas:

* Switch to 1% milk, you will cut out 6 grams of fat per 8 fl. oz

* Use ground turkey instead of ground beef

* Replace oil/fat with unsweetened apple sauce when baking

* Order salad dressing on the side, dip fork into dressing before stabbing salad

* Drink plain water flavored with lemon or lime slices

* Grill, bake, broil, steam, poach or saute... NEVER fry anything

* Eat broth based soups rather than cream based

* Order tomato based sauces for pasta rather than cream or cheese based

* Make your own pizza, top with lots of veggies and use reduced fat mozzarella to top it

* Use chicken stock in place of butter when mashing potatoes

* When preparing meat, trim ALL visible fat

* Restrict red meat consumption to once a week, eat fish or go vegetarian for a day

* Use light or fat free cheeses

* Add lots of herbs and spices for flavor, they are naturally fat free

* When scrambling eggs, use 3 egg whites and one yolk, buy the liquid egg whites

* Replace ice-cream with fruit sorbet

* Use light or fat free mayo and salad dressings. Always serve dressing on the side

As you can see, this is not rocket science. It takes a little bit of thought and a little bit of effort but making these small changes will yield BIG results.

Who the Master? Chocolate the Master!

Ah, the sweet siren call of chocolate. Whether it's a cheap and dirty chocolate bar at the checkout line or an elegant, decadent truffle served with wine, whether you're scarfing down a nutella sandwich at two in the morning or dipping strawberries into a pot of melted delight to feed your loved one, it's all about the chocolate (or chocolatl as the Aztecs used to call it - try yelling that out loud three times, surprisingly fun). But is it good for you? (Or more accurately, do we care if it's good for you?) As always, the annoying answer is 'it depends', but recent research has shown us some interesting things about chocolate (chocolatl) consumption that you can tell your friends at the next cocktail party. So scoot in, bring your eyes close to the screen, and listen up.

First of all, Pringles apparently stole their jingle line (Once you pop you can't stop) from the world of chocolate. Research from the University of Miami and the University of Florida have shown that even having one piece of chocolate can lead to unbearable cravings for more. It's like the gateway drug to more drugs of exactly the same chocolatey goodness. Eight different researches have demonstrated that having even one high powered mega-chocolate truffle leads to an increase in fatty and sugary foods. So that old line of, "OH HENRY, I'll just have one, just one, what can little chocolate do?" Don't even try it, cause SCIENCE has shown such lines of reasoning to be LIES.

Also, having one chocolate can lead to financial ruin (according to SCIENCE, again). It's true. Those poor, deluded fools who had one of those deliriously good, creamy and rich truffles that melt on your tongue and have that light crunchy texture to the exterior when you bite down on them, the taste flooding your mouth and-wait. Where was I? Just ONE of those chocolates causes a marked increase in the desire for high-end products, like expensive watches, fancy pants jewelry or Apple computers. So watch out. One bite and you might find yourself driving home in a new Mercedes, confused and broke and hating life.

Another tricky thing about chocolate (did you think eating something so scrum-diddly-umptions would be simple?) is that once participants in these research projects felt as if they had reached their goal (say, no chocolate for a week) they were liable to reward their good efforts with-you guessed it, chocolate. Fools! Those who were congratulated on their iron discipline were shown to manifest a marked desire for sugary, unhealthy foods. Which is why people might order a salad for dinner, and then feeling pleased as punch about their good behavior order a Death By Chocolate Cake for dessert.

Is there no way to win? If you indulge in chocolate, you want more and also desire to buy expensive things. If you don't eat chocolate, you'll break down and inhale a whole bar as soon as you feel like you've legitimately earned the title of 'Good Little Non-Chocolate Eater'. Must we resign ourselves to always eating chocolate? No, not really. There's a sneaky way around this dilemma that will actually please nobody despite being true. And that's to not only remove temptation, but to view being healthy as a state of mind, an ongoing, never ending process as opposed to a tangible effort that lasts for a finite period of time. Instead of saying, 'I will not eat chocolate or a week,' and then breaking down next Monday, you should say, 'I will eschew sugary foods and embrace a bold, new lifestyle of joy and vigor, energy and health!'

And then sit there in deep melancholy as your fat-free,a diet vanilla sorbet melts, watching the folks over on the other table chortle with glee as they demolish a Mega Death By Chocolate Mountain Cake, laughing and clapping and succumbing to weakness. Ah, the sweet taste of victory!

Truth Behind A Pregnant Woman's Food Craving and How to Control It

Cravings are feelings desiring food combinations which women either do not normally eat or may even stomach under usual eating conditions. In a survey conducted recently, expectant mothers usually crave for "something sweet" like an ice cream (40%), most often called the "middle-of-the-night" urges. Coming in second is the salty snacks (33%). They also go for spicy foods (17%) and lastly, the lip-puckering sour foods like tarts and citrus fruits (10%).

While no scientific explanations could be given, some reasons offered by physicians include:

o strong hormonal changes;

o deficiency of nutrients;

o a conscious or subconscious response to emotion;

o food with special meaning, religion and cultural reasons;

o maybe nutritionally based; and,

o expectations about getting cravings.

On the other hand, food aversion is the opposite of cravings. These are the most hated foods by the expectant mother. Reports state that red meat is the most common aversion of would be mothers.

Expectant mothers need all the nutrients in the right amount to stay healthy and to help their babies develop and grow normally. Cravings may help would-be moms achieve this by desiring nutritious food over those with excessive calories which they sometimes fill their bodies with. Most pregnant women also have a strong yearning for chocolates that stimulates the release of "feel good" brain chemicals in the body. This sometimes helps pregnant women to feel better and manage their
moods even for only a short period of time.

Most popular cravings are: apples, melon, cheese, eggs, milk, olives and pickles, peanut butter and nuts

Experts break down the food cravings of women into trimesters during the pregnancy:

First Trimester - a strong bitter taste; this may be a signal of the body that warns the expectant mother of the presence of high toxic substances in plants and fruits.

Second and Third Trimesters - a craving for sour tasting foods like pickles (this helps women to get a varied diet later on in her pregnancy); urges for sweet and sour foods make fruits a popular craving for pregnant women.

As the pregnancy progresses - an increased preference for salty foods like potato chips; as the blood volume increases in the
body of a pregnant woman her need for sodium also intensifies.

Other Cravings

Unusual cravings are called the "pica" phenomenon. These are cravings for inedible substances such as dirt, chalk, laundry powder and coal, etc. Pica is the Latin name for Magpie, a bird that eats almost anything.

Pica is said to be a sign of an underlying physical or mental illness. If you develop a craving like this, resist it and award yourself with an ice cream, a bar of chocolate or a piece of cake. Remind yourself that the craving will pass and not to stress yourself about it. You shall not give in because this would mean mental problems for the child, impaired hearing and low motor skills development.

Healthier Options

During pregnancy, there's no harm in giving in to food urges but, just don't make it a habit that will endanger you and your child.

Here are some healthy fixes that you can substitute your sinful cravings with:

Ice cream - opt for a nice cold fruit smoothie, non-fat frozen yogurt, sherbet/sorbet or popsicle;

Cola/Soda - flavored seltzer, mineral water with fruit juice or lime juice;

Doughnuts and pastries - whole-grain bagels or toasted bread with jam;

Potato chips - low-fat or baked chips, pretzels or light microwave popcorn;

Chocolate - have a few squares only, chocolate milk, fat-free hot cocoa or make some trial mix with a small handful of chocolate chips, dried fruits and nuts; and,

Cakes and cookies - low-fat banana-nut or zucchini bread or try an Angel food cake topped with fresh strawberries, Graham crackers with a little peanut butter.

Suggestions to control your cravings:

Cravings lose their intensity while the pregnancy progresses. But here are some ways to help you manage your food yearnings:

1. Eat breakfast everyday to lessen the intensity of your cravings.

2. Understand your cravings to help find healthier substitutes for your food urges. Try to take time breaking your cravings down: What are you longing for: something cold, smooth, creamy, and sweet? This will aid you in identifying more nutritional substitutes.

3. Keep a food diary and review whether you're eating a balanced diet or not.

4. Work out to help you curb hunger.

5. Have lots of emotional support from loved ones.

6. Think small in terms of the amount of intake.

7. Always consult your doctor.

While pregnant, keep in mind that this is no time for dieting but a time to experiment with foods and make eating as fun as it should be. Have assortment in your foods, balance your diet well, and make eating fun, not weird.

Respect Your Elders - The Fruits and Flowers of the Elder Tree

If you take a walk almost anywhere in June you are likely to see the elder tree in flower. Elder will seed almost anywhere and often grow on scrub land in the city as well as gracing country hedge rows. In June it is covered in a froth of creamy flowers, which set small dark berries for the autumn. Despite being regarded almost as a weed, this tree has huge value to us if we choose to use it. Traditionally it was planted near houses to ward off evil spirits, more usefully the slightly stinky leaves were tucked into the bridles of horses and oxen to keep the flies away. If you are neither plagued by evil spirits or flies, you may wish to use the best bits of the tree; the berries and flowers. The berries are packed full of nutrition, containing five times the antioxidants of blueberries. They have been shown to increase heart health and the heath of the arteries, improve night vision, and even reduce stress. In the autumn collect and freeze them, adding to berry salads, fruit compotes, pies and smoothies, or they can be added to jams, chutneys or juiced. If elderberry smoothies don't rock your boat, then the berries make a rich fruity wine. There are several supplements made from elderberries including Sambucol; widely available in health food shops, which claims to support the immune system, fight against colds and flu, protect the skin from ageing and strengthen hair, nails, teeth and gums.

Right now the elderflowers are here and ripe for the picking. The flower heads can be dipped in batter and deep fried for a deeply indulgent and unusual food, or made into a sorbet. They can be hung up and dried in an airing cupboard or above the oven, then stored in an air tight container and used as a pleasantly floral and relaxing herbal tea, also said to be good for colds and flu. The flowers can also be used to make the absolutely best hedgerow wine (which curiously also has the power to make you giggle like a school girl), or the most refreshing and pleasing of summer drinks; elderflower cordial. Pray for sunshine this weekend, and take a basket and some scissors out to gather the flowers. Kids will enjoy collecting them too, and everyone will love the finished product.
Here is an easy recipe: you need not be too rigid about the amounts, and I make it using extra flowers, lemons and water. Freeze some in part-filled plastic bottles, and keep the rest in the fridge.

Elderflower cordial:

INGREDIENTS:

20 ripe heads of elderflowers

3 lb granulated sugar

2 lemons, sliced finely

2 oz cream of tartar

3 pints boiling water

METHOD:

Snip the heads (mainly the flowers, with not too many stalks) into a large bowl with the sugar and lemons. Mix well. If possible allow to stand for a few hours before the next step.
Add the cream of tartar, and pour on the boiling water. Cover and leave for 24 hours. Strain and bottle immediately.

Until you have tried it, it is difficult to imagine how heavenly it is to sip home-made elderflower cordial with sparkling water on a June afternoon in the sunshine.
