Dessert Recipe Ideas: How To Make An Orange Juice Cake

Do you and your children love to drink orange juice? Perhaps you are one of those people who would rather drink orange juice than to drink any other types of drinks. Recipe for Orange Juice Cake

What You Need


2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
½ cup shortening
1 cup sugar
2 beaten eggs
1 cup milk
1 cup chopped dates
1 cup boiling water
1 cup chopped walnuts or pecans
1 grated orange rind
Juice of 1 orange
2/3 cup sugar

How to Make It

Preheat the oven to 350 degrees Fahrenheit.

Sift together the flour, baking powder and baking soda to combine. Set aside until needed.

Prepare a 9 x 13 inch cake pan by lightly greasing and then flouring it. Set aside until needed.

Cream together the shortening, sugar, and then add the eggs one at a time while beating after each. Gradually stir in the dry ingredients and milk while alternating between them. Mix well to combine.

Mix together in a medium size bowl the chopped dates and the boiling water and then stir in the chopped nuts and the grated orange rind. Add this mixture into the cream mixture and then blend well to combine.

Pour this mixture into the prepared cake pan and then place in the preheated oven to bake for about 35 to 40 minutes or until done.

Mix together the orange juice and the remaining sugar to prepare a glaze for the cake. Remove cake from oven and then pour the orange juice glaze over the hot cake. Allow the cake to cool before cutting and serving.

Walt Disney World Fine Dining - Jiko The Cooking Place

When you first think of dining at Walt Disney World you would be forgiven for not first thinking of the opportunities for a fine dining experience. In reality Walt Disney World offers some excellent restaurants which are more than worth a visit by tourists and locals alike.

Jiko - The Cooking Place is a particular favorite of mine. It is located in Disney's Animal Kingdom Lodge. Chef de Cuisine Anette Grecchi Gray presides over this AAA Four Diamond Award winning restaurant. The origins of her creations for the menu were her participation in 1999 in the 25th anniversary of the South African Cook's Society in Johannesburg. She cooked for African dignitaries and traveled into the bush to learn the cuisines and culture of the South African tribes.

The Jeffrey Beers designed interior is a fabulous mix of warm colors,taking it's inspiration from The Lion King, and creating an inviting and sophisticated atmosphere. You are warmly greeted by African students who are participating in the Disney one year cultural exchange program. The focus of the restaurant are the twin wood burning ovens in the open kitchen. Diners can choose to sit at the bar and observe the chefs prepare the food for the restaurant.

The style is American cuisine blended with influences from Africa, Europe, the Mediterranean and India. This is an unusual mix, but it works beautifully. There is not anything too challenging here though. I found the originality refreshing. Familiar dishes are offered with a different blend of flavors and ingredients. Appetizer offerings include Green Asparagus Soup, Tikka Marinated Ahi Tuna, and Kalamata Olive Flatbread a particular favorite of mine. The signature dish is the Wood Grilled Filet Mignon with macaroni and cheese and red wine sauce. An unusual combination, but it works wonderfully. Other items include Durban Shrimp Curry,Tamarind Braised Beef Short Rib, and Wood Grilled Pork Tenderloin. I recommend that you order the cheese plate which has selections of goat and sheep's cheese.

Many of the waiters are sommeliers and will be glad to offer samples of wine before you decide on a bottle. They will expertly guide you through the exclusively South African wine list. With over 1800 wines, Jiko has the largest collection of South African wines of any North American restaurant.

Not forgetting the dessert, my favorite is the Flourless Chocolate Mocha Cake Stack with vanilla ice cream and caramel sauce. Other current offerings include spiced fruit sorbet and Green Apple Mascapone Trifle.

This fine dining restaurant has an unusual feature. A children's menu. My young children, who are very familiar with and enjoy dining out in high quality restaurants, appreciated the quality of the food. The menu has the usual kid's offerings of macaroni and cheese, grilled cheese and pizza but they are cooked from scratch with high quality ingredients. Our family is always very happy at Jiko.

Gluten Free Meal Ideas

When I say I am gluten free, most people still do not know what that means. We have covered the "why" in a few past newsletters but I thought I would help some of you who are still confused with the "what". What do I eat? What could you eat if you were to try going gluten free? I made a list of some of my favorite meals and snacks to help!

Breakfast

Besides the side effect of weight loss, people are curing chronic conditions and healing themselves by eliminating gluten from their diets.. I wanted to impress upon you that this is a medical condition- not a fad diet. Gluten is found in wheat, rye and barley.

I encourage you to try JUST 2 weeks to see how you do. If you can extend if for one month because you are someone who has one of these auto-immune disorders, we have seen that 1 month can heal many skin conditions and decrease chronic pain and arthritis.

The Foods You Need to Eat During Pregnancy!

Need some real, practical suggestions for healthy breakfasts, snacks, meals and drinks for avoiding excessive weight gain during pregnancy? Look no further - we've even given you a shopping list!

PREGNANCY NUTRITION: TOP FOODS TO EAT AND TO AVOID!

Pregnancy Nutrition: BREAKFAST IDEAS

Fresh fruit smoothie: Blend any fresh fruit (with some natural unsweetened live yoghurt (soya, goat or cow's) and a handful of mixed seeds (e.g. pumpkin, sunflower, sesame and linseed).

Tip: if you are in a hurry, add fresh orange or apple juice to dilute your smoothie so it's easy to drink, then put in a beaker and take it with you.

Boiled, scrambled or poached egg with buttered oat cakes or rye toast. - Wholegrain rye toast spread with nut butter (almond, cashew, hazel or peanut)

Mix a handful of oats in a bowl of live natural yoghurt and top with a few pieces of chopped fresh fruit and a handful of chopped nuts.

Spread some cream cheese on corn cakes or wheat-free bread/crackers and top with wild or organic smoked salmon.

Porridge cooked in water with grated apple and a teaspoon of cinnamon. Tip: soak oats in water for 10 minutes before cooking - this will bring out their creamy flavour, so there's no need to use milk. Add some hot stewed apple and berries

An omelet (filling ideas: grated cheese and red onion, mixed fresh herbs, chopped tomatoes and peppers, garlic mushrooms and watercress, smoked salmon).

Baked beans on rye toast.

Pregnancy Nutrition: DRINKS IDEAS

Herb teas instead of caffeinated tea. There are so many varieties now, experiment until you find one you like. Rooibosch (Red Bush) tea is the closest to 'normal' tea and can be drunk with milk.

Caro, Barleycup and Dandelion coffee are all caffeine-free coffee alternatives. Teeccino is a delicious coffee substitute that you make in a cafetiere (comes in different flavors, e.g. mocha, vanilla nut, almond amaretto)

Instead of alcohol, mix fruit, elderflower or ginger cordials with sparking water.

SEEDS are rich in protein, essential fats, vitamins and minerals - grinding them helps to release their nutrients. Aim to have a heaped tablespoon each day and add to cereals, yogurt, soups or salads.

Buy some fresh, unsalted seeds - pumpkin, sunflower, sesame and linseed (also called flaxseeds - the golden variety is richer in essential fats than brown).Using a coffee grinder or a grinding attachment from a food processor, grind a mixture that's 50% linseed and 50% a combination of pumpkin, sunflower and sesame. Grind enough to fill a small glass jar (choose glass rather than plastic as plastic can damage the essential fats in the seeds). Store your jar in the fridge. Ideally, keep your unground seeds in a dark cupboard to protect them from light or oxygen damage (essential fats can be damaged easily).

Pregnancy Nutrition: ENERGY BOOSTING SNACK IDEAS

An apple and a handful of pumpkin or sunflower seeds

A pear, peach or other seasonal fruit with 10 fresh almonds

Three oat cakes with nut butter (almond and hazelnut butter is a delicious alternative to peanut - buy in health food shops).

Mackerel, salmon or mushroom pate on two ryvita (beware pate in pregnancy unless homemade and without fresh mayonnaise/egg).

Carrot and celery sticks with hummus.

Berries stirred into a small pot of natural yogurt.

Pregnancy Nutrition: QUICK AND EASY MEAL IDEAS

Roasted vegetables with pesto crusted chicken or fish: Add a pesto-coated organic chicken breast or fish fillet (organic salmon or cod works well) to a baking tray of part-roasted vegetables (e.g. new potatoes, cherry tomatoes, courgettes, onions, garlic red and yellow peppers) and cook for a further 10-20 minutes. Season with salt and freshly ground pepper.

Chickpea and apricot tagine: To a basic tomato sauce (i.e. a tin of chopped tomatoes added to an onion and garlic clove softened in olive oil), stir in half a finely chopped red chill, a pinch of ground cumin, a handful of chopped dried apricots and three handfuls of chopped mixed vegetables (e.g. carrots, courgettes and baby corn). Add water if necessary to make a nice sauce consistency, then season and simmer for 15 minutes. Add a tin of chickpeas and cook for a further 10 minutes, then stir in a handful of fresh chopped coriander and serve with couscous, quinoa or brown rice.

Haddock poached in a parsley and lemon tofu sauce: Blend half a block of silken tofu with a clove of garlic, the juice of half a lemon, some chopped parsley, salt and pepper. Add to a pan with two haddock fillets and slowly simmer so that the fish poaches (about 15 minutes, but keep checking). Serve with steamed broccoli or green vegetables and brown rice.

Baked potato and sweet potato filling ideas:

Hummus (home-made ideally); Ratatouille or baked beans topped with grated Cheddar; Cottage cheese with chives or spring onion, mixed with chopped red or yellow peppers, cucumber or prawns; Roasted vegetables and pesto; Tinned or smoked salmon mixed with cottage cheese or crème fraîche; Cannelini or butter beans mashed with anchovy fillets and black olives, with lemon juice and black pepper; Steamed leeks, broccoli or cauliflower florets mixed with cheese sauce; Hard boiled egg chopped and mixed with cottage cheese or crème fraîche and chopped parsley; Guacamole (again, make your own or buy in the deli section of your supermarket)

DELICIOUS SALADS (perfect for a light meal or packed lunch):

A simple salad of mixed leaves and chopped raw vegetables can become a nutritious and delicious meal in moments if you keep your fridge stocked with deli delights such as artichoke hearts, sun blushed tomatoes, olives, hard boiled eggs, peppers, sweet baby peppers, anchovies, smoked fish and slices of lean white meat.

Smoked organic trout fillet (a delicious alternative to smoked salmon that is packed with Omega 3 Essential Fats) with flageolet beans or lightly steamed broad beans mixed with lemon juice and black pepper.

Hot smoked organic trout or salmon, or smoked organic mackerel, flaked through whole grains such as quinoa, brown rice, millet or couscous, with chopped raw vegetables. Season with lemon juice, balsamic vinegar, black pepper and chopped fresh herbs.

Tofu chunks (marinated in tamari or soy, ginger, garlic and sesame oil and brown rice syrup), stir fried for seven minutes or till golden and fairly crisp. Toss through whole grains as above, or stir into buckwheat noodles with finely sliced cucumber and seaweed (packets of dried varieties can be found in the Oriental section of supermarkets). Sprinkle with sesame seeds and serve warm or chilled. - Mixed bean salad with peppers, cherry tomatoes, red onion, sweet baby peppers and chopped hard boiled egg, with a tomato and basil dressing.

Chickpeas dressed with paprika, lemon juice, black pepper and a sprinkle of sea salt or Solo low sodium salt and parsley, with quinoa.

Warm potato salad with passata (sieved, chopped tomatoes - buy at your supermarket), with a dressing made from olive oil, paprika, chillies and crushed garlic.

Taboulleh of couscous, bulgar wheat, millet or quinoa with chopped cherry tomatoes, spring onions, cucumber, parsley, mint, olive oil, lemon juice and seasoning.

Whole radishes, crumbled feta cheese, broad beans and alfalfa sprouts.

Blueberries and apricots on green leaves such as lamb's leaf or spinach, with feta cheese crumbled over the top.

EASY PUDDINGS

Raspberry sorbet: Liquidize frozen raspberries and bananas to a smooth puree.

Apricot whisk: Puree a handful of apricots (fresh or dried) with half a cup of low-fat curd cheese or silken tofu lightened with two whisked egg whites.

Ricotta Cream Turnover

Welcome back. Hope you brought your appetite...you're going to need it!  Today, we're going to talk about Ricotta Cream Turnover, or "Ravioli con Crema di Ricotta" or "Cassateddi Fritti o 'Nfurnati" in Italian.  My research reveals that these little Italian Desserts are a spin-off from the "breast of virgin" or "minni of virgin".  They are small pouches of pastry dough which contain mounds of pudding with cherries on top to form the "nipples".  It is said that the Sicilians eat this dessert reverently in honor of martyred St. Agatha.  Originally, they were either baked or fried around March 20 as the spring equinox occurs to signal the beginning of the spring season.  In the provinces of Trapani and Syracuse, these Italian desserts are made for Carnevale which is a feast that occurs before Lent.  They are also prepared for the Christmas Season.  Because these delicious pastries have become so well liked, they are now pretty much prepared year round and are a very popular snack whether baked or fried.  The original version used ricotta, honey and spices for the filling but more recent versions are using puddings and preserved fruits as the filling.

The Recipe:

For the Filling

2 1/2 lb. ricotta
1cup granulated sugar or ½ cup of honey
4 oz. chocolate chips
4 oz. diced preserved fruit
Pinch of vanilla powder
1 drop cinnamon oil
Zest of 1 orange or 1 drop of orange extract
Small pinch of salt

For the Dough

2 lb.Semolina flour
1/2 cup granulated sugar or 6 tablespoons of honey
6 tablespoons of olive oil or 4 oz. Crisco or butter
2 large eggs
2 shots of cognac or vodka or ½ cup of Marsala wine
Small pinch of salt
Zest of 1 lemon
Water if needed

For Cooking

Canola or corn oil for deep frying
2 eggs beaten with 4 tablespoons of milk for the egg-wash if baking the cassateddi.

The Filling
Combine all the ingredients to create the filling. Filling should be of a smooth consistency. If filling is too watery add some crumbs made of sponge cake or cookies.

The Dough
Combine all ingredients to make dough and knead for 4-5 minutes. The dough ball should be smooth and resemble the consistency of bread or pizza dough. Add some water if the dough is too hard to knead. Cover and rest dough for 20/30 minutes. Cut the dough in 4 pieces, and then cut again to divide each piece into 6 pieces, shape into balls.

The Cassateddi
Roll each piece of dough with a rolling pin to 1/8 inch, giving an elliptical shape. Place 1 teaspoon of filling in the center of each piece of rolled out dough,  and pull the long edge of the dough over the filling to form the shape of a half moon, press down on the edges to create a good seal to prevent the filling from leaking.  Place them on a greased baking sheet. Repeat this with all of the pieces of dough.  Proceed with the cooking.

To Fry
Heat the oil in a heavy sauce pan.  Deep fry the cassateddi over a medium heat until a golden color on both sides.  Remove from the oil with a slotted spoon and place on a dish covered with paper towels to drain.
Sprinkle with granulated sugar or honey and serve hot or cold.

To Bake
Mix the eggs and 4 tablespoons of milk together to make the "egg wash".  Using a pastry brush, brush the egg wash" over the cassateddi and bake at 375 degrees, until a golden color.  Remove from oven and allow to cool slightly.  Sprinkle with a light dusting of powdered sugar or honey, serve hot or cold.

Yield: approximately 24 cassateddi (turnovers)

Note:  If you'd prefer to use a special pudding recipe that you love, feel free to modify to your hearts content.

Prepare A Romantic Dinner This Valentine's Day - The Healthy Way

Preparing a nice romantic dinner for Valentine's Day is a great way to show your spouse or partner how much you love and appreciate them. It is also a nice way to spend some quality time together as a couple. And by preparing healthy dishes, you show your loved one that you care about their health and wellbeing as well. So this year, replace a fat-laden meal with a lighter, yet flavorful and satisfying meal.

Start the evening with a bowl of soup. Since it's still cold outside in most parts of the country, a hot bowl of soup is always welcome. You can purchase a low-sodium vegetable soup, or make your own by gently simmering some fresh veggies in some low-sodium chicken broth.

For the main case, choose a lean piece of meat or fish and bake it. For example, rub some olive oil, garlic and fresh rosemary on boneless, skinless chicken breast and bake it. Or wrap a piece of fresh salmon in aluminum foil along with some lemon slices and dill. Bake it until the fish is done. If it's warm enough outside, you could also grill a beef filet or some lean flank steak outside. Add a fresh salad or some steamed veggies and some wild rice to round off the main course.

If you are planning on serving alcohol with your Valentine's Day dinner, go with a nice bottle of red wine. Enjoyed in moderation, red wine has been shown to have some health benefits. Red wine contains flavonoid phenolics, antioxidants that are good for your heart. Studies have also shown that red wine reduces bad cholesterol and raises good cholesterol.

Of course no romantic meal would be complete without dessert. Something simple with some fresh fruit should to the trick. You can cover strawberries in some melted dark chocolate. Drakensberg Getaway

The drive towards the Drakensberg Mountains swept over the undulating foothills down side-roads that snake along meandering countryside to our first destination Cleopatra Mountain Farmhouse. Cleopatra is tucked away in the beautiful Kamberg valley in the Drakensberg Mountains, it is a gourmet getaway where attention to detail is evident everywhere. The dining room and lounge are extended over a trout-filled dam that looks out across the water to the stunning mountains of the Southern Berg. It is a magical place - a secluded luxury hideaway where the most important factor is not to come here if you are on a diet!

The build up to dinner was an event in itself with all the guests meeting at 7pm for drinks and given an entertaining, detailed account of the gourmet meal that was to follow by Richard the chef and owner. Everything is hand prepared on the premises, some of the sauces (the highlight of most plates) take up to three days in creation. It's three fabulous starters each, in our case a plate of meltingly succulent scallops, then a rich, baked butternut soup with a dollop of creamy pesto and a plate of Mozambican king prawns. A small freshening sorbet provided Richard the time for final preparations of the main course, an elaborate plate of choice lamb cuts on rosti with three different chutneys, and rounded off with a rich chocolate concoction, perfectly offset by homemade orange-infused vanilla ice cream.

Breakfast the next morning followed in a similar style and although difficult to leave we knew that we had to walk some of this food off or we would never make the next meal. That food was possibly the best I have ever eaten but seriously doubt having survived 2 days of this non stop eating.

Kamberg hosts a site of Bushman rock art with relative easy access, a stunning walk including a waterfall, and particularly well preserved examples of Bushman paintings. It is here that the "Rosetta Stone" of San art first provided archaeologists with the key to interpreting the symbolism of the paintings as spiritual in content - showing how hunters gained power from the animals that they killed. Its all professionally explained by guides and although I had seen these paintings before I was again moved.

The road to our next stop the Antbear turned out to be just a little hop away mainly because Richard had guided us via the back roads. The Antbear Guest House is one of those seldom found gems hidden away in a network of rural roads in the Drakensberg foothills. The little white washed farmhouse has been converted into a place of artistic elegance. It is full of hand sculptured wooden furniture, a labor of Conny and Andrews love. Andrew greeted us dressed in very flamboyantly African dress and welcomed us with a cup of tea. He is a humorous character with a passion for entertaining, conversation and alternative living.

Andrew is a dab hand in the kitchen too. The food is very different to that of Cleopatra definitely not as rich but no less of an experience. Supper was the best Indian food I have ever eaten with a selection of curries, papdams, onion badjis, sambals and naan bread to boot. Andrew quite likes the company in the kitchen and its really different watching this kind of cooking. Its like a circus as he casually juggles the egg turner or adds a handfull of spice to some frying onions. The hosts eat with the guests at a single table with candle chandeliers and a fireplace. Its very welcoming indeed. For desert Andrew whipped up caramelized cape gooseberries in whiskey with hint of time. Why the Antbear is so affordable is a bit of a mystery me and till today the Antbear is my favourite guesthouse anywhere.
Armed with Conny's picnic lunch setoff to Giants Castle Nature Reserve. Giants Castle is a spectacular part of the Drakensberg and one of my favorite regions. Its has less tourism than most other parts and I have always wondered why as it is about as beautiful as it comes. We wanted an easy walk so opted for Worlds View a 14 km trail with a spectacular 360° view at its end.

We had lunch and soaked in the views and got back to Giants Castle Camp in time for a well-earned cappuccino and piece of cheesecake.Dinner back at the Antbear turned out to be a Moroccan evening. Again the food was excellent. Andrews advice and enthusiasm inspires confidence and we reorganised some of our plans The following day was supposed to be a visit to the battlefields but I had forgotten about the Drakensberg Boys Choir. Andrew arranged tickets for us and this is really something not to be missed under any circumstances. The day was spent in the Champagne Valley another beautiful part of the Drakensberg.

For dinner Andrew had taken the Zulu line. An interesting stew with a type of dumpling bread baked in the same pot. Butternut and maize meal and some wild spinach added a touch of colour. What I have never seen before was the wild asparagus sautéed in lemon and butter with a hint of sesame oil. I start to drool even thinking about that now.

The next morning was a guided horse trail through the Drakensberg foothills. I am not a horse enthusiast normally but with such relaxed horses I would not have missed it for anything. It was just before lunch we headed of to Montusi Montusi a bit like a hotel with a personal country cottage feeling about it. The lodge is perfectly positioned to catch the surrounding view, fields of galloping horses and lakes to fish in. The food here too is excellent perhaps not as unexpectly different as the Antbear but our lamb with chargrilled lemon and mint was perfect.

Our last day in these mountains was spent walking the Tugela Gorge Walk below the Amphitheatre in the Royal Natal National Park. It took us to the base of the Tugela Falls, where the Tugela River plunges 948m (3,109 ft.) from the plateau, its combined drop making it the second highest falls in the world, and afforded us marvelous views of the Amphitheatre.

Our trip back to Durban guided us through the Midlands Meander a place I find to be over rated unless you make the effort to pick out the gems that it does offer. We stopped at Marakesh Israeli Goats Cheese for a glass of wine and some cheese tasting. A perfect light snack after that lovely drive to get here. Our next stop took us passed the Karkloof Falls to the Karkloof Canopy tour.a unique eco-experience that takes people on a 3-hr adventure through the magnificent Karkloof indigenous forest. The canopy tour involves traversing from one platform to another along a steel cable suspended up to 30m above the forest floor.

It was five thirty when we arrived back at my flat in Durban. We were all tired but satisfied with our week in the Drakensberg Mountains. I know that this region offers much more and far greater extremes but for us it was a perfect balance of natural beauty, good living and just a little excitement.
