Recipe for Orange Juice Cake
What You Need
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
½ cup shortening
1 cup sugar
2 beaten eggs
1 cup milk
1 cup chopped dates
1 cup boiling water
1 cup chopped walnuts or pecans
1 grated orange rind
Juice of 1 orange
2/3 cup sugar
How to Make It
Preheat the oven to 350 degrees Fahrenheit.
Sift together the flour, baking powder and baking soda to combine. Set aside until needed.
Prepare a 9 x 13 inch cake pan by lightly greasing and then flouring it. Set aside until needed.
Cream together the shortening, sugar, and then add the eggs one at a time while beating after each. Gradually stir in the dry ingredients and milk while alternating between them. Mix well to combine.
Mix together in a medium size bowl the chopped dates and the boiling water and then stir in the chopped nuts and the grated orange rind. Add this mixture into the cream mixture and then blend well to combine.
