Making and testing recipes with raw foods can be a good and creative pastime. Spice Tips - Sweet Spices For Desserts

There are many different spices and herbs that can be used when making desserts. Mint, lavender, lemon balm, rosemary and others add a nice flavor to sugar cookies, jellies and other sweet treats. You can even use scented geranium leaves to flavor sugars and cakes. Flowers like violets and rose petals can also be used to flavor sugar, cookies, and jellies.

Spices such as cinnamon, cloves, allspice, and nutmeg are traditionally used in desserts as well as savory dishes. Cardamom is an Indian spice that is often used to spice up desserts and beverages. Ginger and mace also add a bit of spice on occasion. In Mexico, they even use chilies in desserts. Did you know that hot chili blends really well with chocolate?

If you have never used a lot of spices in your desserts, you are in for a real treat. Spices and herbs add a whole new dimension to your sweet dishes. Anise adds a wonderful licorice-like flavor to baked goods. If you follow the recipes being showcased in some of the finest restaurants these days, you may be amazed at the spice combinations being used in desserts.

Recipes like ice cream infused with tarragon or strawberry shortcake covered in basil syrup are all the rage. Of course, cayenne chocolate truffles and hot peppers dipped in chocolate are another hot item. Why not try some of these unusual combinations yourself? You will learn a lot about spices and how they interact together with sweet ingredients.

The best rule of thumb to follow when you are experimenting is to go slowly. Fresh spices and herbs are full of flavor. Do not overwhelm yourself with too much of a good thing. Add a little bit at a time, tasting as you go. Once you find the perfect combination, take a lot of notes so you can replicate the results. Experimentation in the kitchen is a lot of fun; it is even better if you end up with a recipe you can make again.

Take care to only use the best herbs and spices you can afford. Many herbs can be grown in your own garden. Spices are more difficult, and most need to be purchased from a recommended source.

Lollies and Memories

It always makes me smile whenever I see a child licking lollies especially if it's the big and colourful one with a swirling pattern. I myself have fond memories of eating lollipops and other sweets when I was younger. When my mom packs my lunch, she always includes some sweets in it. Lollipops and chocolate bars are my favourites. She even has a story of me crying one time and the only thing that made me stop was a lollipop.

Lollies are perhaps one of the most popular confectionery products in the world. It appeals to both the young ones and the young at hearts. In fact, lollipops are given as freebies in banks, government agencies and even barber shops for patrons and customers while awaiting their time to be served. It's such a hit that nearby candy shops always run of stocks of favourite brands of lollipops.

The original idea of lollies came from the concept of toffee apples sold on a stick. It's still a big mystery as to how the lollipops of today came to be. One kind of confectionery during the medieval era is closely related to lollipops - boiled sugar and eaten using sticks or spatulas. The boiled sugar dried on some of the sticks but is still edible and can be stored for future consumptions.

Moreover, lollies are also listed as among the best loved snacks of kids and even teenagers. Lollipops are often purchased by the mentioned age group in school events like sports fests, programs, and whatnot. Movie houses also stock up on lollipops and other sweets as they are also their bestsellers other than the traditional popcorns and sodas.

Lollies are also great for party giveaways and events souvenirs. I remember a friend who ordered personalised lollipops for their prenuptial celebration. Companies are often customers of many local candy shops. Lollipops are loved by employees as tokens for company initiated events. Lollipops are also perfect for kiddie events like birthday parties, talent shows, and whatnot.

Valentine Desserts: Delicious Desserts for Valentine's Day Dinners

Pick a simple but delectable Valentine Day dessert recipe to add the finishing touch to your Valentine dinner. Chocolate is a lovely gift for Valentine's Day, and it's good used to add a note of indulgence for your dessert. Another good choice is succulent fresh fruit, which is always so welcome in winter. Any pink or red fruit is ideal, such as strawberries, raspberries or rhubarb. Tropical fruits are also an excellent choice, and for the simplest dessert of all, you could simply serve a platter of sliced fruits such as juicy mango, halved passion fruits, fresh pineapple chunks and papaya wedges. Add some cubes of chocolate cake, and a scattering of shelled nuts, and you'll have an instant and delectable Valentine's Day dessert.

Here are more ideas for Valentine's Day desserts.

Make it pink
Early forced rhubarb is a lovely shade of fresh pink that looks so pretty in a mousse. Chop 450g (12 oz) fruit and simmer covered for 10 min in a pan with 50ml (4 tbsp) fresh orange juice, 1 cinnamon stick and 25g (5 tsp) caster sugar, until the rhubarb is tender. Remove the lid and cook for another 5 mins until most of the liquid has evaporated. Stir in 1 tbsp redcurrant jelly and leave to cool. Fold the fruit through 150ml (2/3 cup) 0% fat Greek yogurt, spoon into glasses and chill for 2 hr. This makes six individual portions, and keeps for 1-2 days refrigerated.

Just add chocolate
Prepare a plate of mixed fruit cut into bite-sized pieces. Put 200g (1 ½ cups) dark chocolate in a heatproof bowl and add 50g (1/4 cup) butter, 75ml (1/3 cup) water and 2 tbsp Malibu or brandy. Place over a pan of barely simmering water, so the base of the bowl is just above the surface of the water. Stir occasionally until melted, then stir until smooth. Serve with forks for spearing the fruit and dipping into the chocolate sauce.

Celebration sorbet
Put 600ml (2 ½ cups) apple and mango juice into a pan with the zest of a lemon and 75g caster sugar. Heat gently until the sugar has dissolved, then bring to the boil, simmer for 1 min, then pour into a bowl to cool. Strain into a container and place in the freezer for about 4 hours. Remove from freezer and whisk well to break up the ice crystals, then freeze until firm. Serve piled into glasses and decorated with mint leaves, with chocolate finger biscuits.

Heart-shaped delights
Any dessert can become a Valentine dessert, if you add a heart-shaped decoration. Many cookware shops sell heart-shaped moulds and cutters, which you can use to bake cakes and cookies for the day. Or make a heart-stencil, by cutting a heart out of sheet of thin card. Place the card with the heart-shaped hole on top of a cake or pile of pancakes, and dredge with icing sugar. Lift off stencil carefully.

Keep it healthy, by using low fat ingredients and choosing chocolate with a high proportion of cocoa solids, for these Valentine's desserts.

Dessert Recipe - Let Them Eat Chocolate Cake

Baking a really good chocolate cake from scratch is not difficult. Anyone with rudimentary skills in the kitchen can manage it. Cake mixes are good, but with a little extra effort, you can make a cake the old fashioned way and really have a special dessert. About the only difference from using a mix is that you have to spend a couple minutes assembling the ingredients and then you are just blending it in a big bowl with an electric mixer.

In this chocolate cake recipe, you can use either cocoa powder or melt squares of unsweetened chocolate. This versatility adds to the convenience of the dessert recipe because you can use either form of baking chocolate, depending on what happens to be in the cupboard. Although you can also use either all-purpose flour or cake flour, a cake made with cake flour will have a finer and softer texture. Don't worry if you only have all-purpose flour. Your cake will still turn out fine.

When you go shopping for the ingredients, keep in mind that a good chocolate cake, or any chocolate dessert, starts with selecting a good chocolate. Going upscale, especially with something from Europe, is definitely worth the extra couple bucks. Common products from Hershey's or Nestle are just adequate, not great.

Chocolate cake recipe ingredients:

2 cups all-purpose flour or cake flour
2 cups sugar
1/2 cup vegetable oil
3/4 cup water
3/4 cup buttermilk
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon baking powder
2 eggs
4 ounces unsweetened chocolate melted and cooled OR 2/3 cup cocoa powder

Select the type of cake pan that you wish to use for baking. You can choose from two or three round 8 or 9 inch pans, bundt cake pan, or 13 x 9 inch rectangular pan. With shortening or butter grease your pan and then dust with flour. This ensures that the cake will not stick and comes out of the pans easily.

Preheat your oven to 350 degrees F. If using chocolate squares, melt them on very low heat or use a double boiler and then let the chocolate cool. If using the cocoa powder you can mix it in immediately with the other dry ingredients.

Assemble the dry ingredients into a bowl and then add the buttermilk, water, vanilla, oil, and eggs (and melted chocolate if that is what you are using). With an electric mixer, beat on high for 3 minutes until the batter has a smooth consistency with no lumps. If you don't have an electric mixer, use a large spoon or whisk and stir hard until batter is smooth.

Pour the batter into pans and bake according to these guidelines:

Round cake pans: 35 minutes
Bundt pan: 55 minutes
Rectangular pan: 45 minutes

Bake until a wooden toothpick inserted in cake comes out clean. If cake is still gooey bake another five or ten minutes, but you do not want the cake to get too dry. When baking is done, cool the cake in its pan or pans. When pans are cool to the touch, you can invert the pans and remove the cakes. Use a butter knife around the edges of the pan to loosen the cake if necessary.

Once the cake is completely cool, select the type of frosting you want to use. It is important to make sure that the cake is not the least bit warm before frosting because this will heat the frosting and make it sloppy.

Retro Sweets Trivia

You may be enjoying your Hershey's Milk Chocolate today but do you know that these delights are made since the 1900s? Yes, these are some of the retro sweets that made it through the changing times and proved to be one of the loved classic sugary treats in the world.

It was in 1896 when the first Tootie Roll came out. It was Leo Hirshfield who made it and had it named after her daughter Tootsie. Well, look at that, I'm sure a lot of us has memories associated with this particular chewy goodness. A retro sweet indeed but is continued to be loved by the public. Though you don't see as much on the store shelves now, it still never fails to give enjoyment to those who have grown with it and the new generation also finds it appealing and of course tasty!

During the 1920s some of our still beloved candy bars came out. The Baby Ruth was invented on this year. Believe it or not, it was named after for President Grovers daughter, Ruth. I have been to a lot of movie houses, picnics, sports events and dates and this candy bar was always there. Whenever I have the chance to stumble on these goody retro sweets in stores, I always bring home quite a number for the family to enjoy.

Candy canes! Oh they surely add colors and smile during the holiday seasons. On 1950 Bob Candy Canes were introduced as the Kris Cringle Brand. These retro sweets have become a sensational Christmas symbol and ever famous among young ones and the young at hears alike. No Christmas of ours is ever complete without candy canes hanging on the Christmas tree every December.

Who doesn't know Snickers? These treats are everywhere! It was on 1970 when the first the first Snicker Munch Bar is created. Another well loves retro sweets that transcended throughout the years! We continued to love them and the kids of the new generation love them too! Surely Snickers will be here to stay for a longer time.

A Healthy Dark Chocolate Cake Recipe

Weight loss does not mean going hungry or limiting yourself to flavorless foods. There are various calorie-smart recipes out there, from soups, to main courses, to desserts (yes, you got that right-even on a diet, you can still enjoy a sweet treat).

For instance, a lot of people don't know that chocolate is actually healthy. It comes from plants and contains an amount of antioxidants that is 8 times more than what can be derived from strawberries, helping you battle the aging process. It also contains serotonin and revs up the endorphins, making you happy and optimistic about your endeavors (which, in this case, might include weight loss). Too much of a good thing can be bad for you. The key is to enjoy this wondrous food in moderation.

Here's a recipe for your basic, healthy Dark Chocolate Cake. To make it, you are going to need a cup and a half of all-purpose flour, a quarter of a cup of almonds (crushed), 5 tablespoons of cocoa powder, a teaspoon of baking powder, a quarter of a teaspoon of salt, 4 oz. of finely grated beets (you can just peel the beets and pop them in the blender), non-fat or low fat milk, 2 tablespoons of black coffee (or you can use its equivalent by dissolving instant coffee in warm water), 3 large-sized eggs, and cup of sugar.

Combine the dry ingredients in one bowl; namely, the flour, the almonds, the cocoa powder, the baking soda, and the salt.

In a separate bowl, whisk the eggs and sugar till it achieves a fluffy texture. Gradually pour in the beets, the buttermilk and the coffee and whisk briskly. Fold in the dry ingredients and mix everything till smooth. Make sure that there are no clumps in the batter.

Pour the batter in a non-stick baking pan (or a regular baking pan lined with wax paper) and cook at 150C for 35 minutes or so. You can check if the cake is done by poking it with a toothpick. If bits of the cake stick to it, then it still needs to stay in the oven for a while.

When the cake is done, leave it to cool for about 10 to 15 minutes and prepare the icing. For this, you are going to need half a cup of dark chocolate pieces, 2 tablespoons of honey and black coffee. Using a non-stick pan, mix all the ingredients together in low heat. Once everything is well-blended, take the pan out of the fire and spread the icing all over the cake with a spatula.

If you're not a big fan of icing, you can skip that step and serve the cake as it is, to the side of tea or coffee. It's an amazingly yummy comfort food that doesn't pack in as much fat as the store-bought versions. Based on the measurements, this should serve 10, with an estimated 222 calories per serving.

Top Retro Sweets Ever

Remember those good old days where you are sucking and enjoying your favourite retro sweets? You don't need to just remember those days you can live with them again. Retro sweets are back on their original form and taste. It is great to feel nostalgic after dreaming about what happened to your favourite retro sweets and the memories that go with them.

You must have remembered the sweet tobacco, cola bottles, space dust, sherbet fountains and gobstoppers and how you used to enjoy these treats. These five are considered as the top retro sweets ever so it's just normal for you to crave for them again because they are back. Your old time favourite sweets are back for good so you can enjoy eating them again.

Sweet tobaccos are your favourite once and will remain your favourite if you ever try eating them again after long years of missing their addictive taste. They are coconut strips dusted with chocolate powder resulting into a heavenly treat that you can never forget. It is even better stop using actual cigarette and focus on enjoying this delectable treat that you shouldn't miss.

If you can taste it again you will be able to remember how addictive they are and how they were and how addictive they can be even up to the present. You can even recall how you spend your time with your friends exchanging and enjoying sweet tobacco and how you pose as smoking real tobacco.

Another old time favourite is the cola bottles. Cola bottles have two varieties, the fizzy one and the non-fizzy one. Usually the fizzy one is the favourite followed by the non-fizzy one because of the tingling and the sour bite that is different from other traditional bottles. Usually people love new tastes and exotic ones so it is not surprising that we are more inclined to the fizzy cola bottles.

It offers a fizzy and sour bite and everything fades. The enjoyment of feeling the different sensation of eating it whole comparing it to other sweets is just pure pleasure. You will surely travel back to your memory lane if you get to taste them again.

Space dust was and is a popular confectionery from the past till the present. This is because of its unique ability to produce crackling sound when it is consumed. This is really unique because only space dust can do the tick due to the manufacturing process that it undergoes. It comes in different flavours that will surely make you remember all the fun that you have while eating it and wondering how it was make such noise.

Sherbet fountains are also favourite sweets that even the change of its packaging upset a lot of people. It is traditionally contained in a paper tube where a large quantity of sherbet was housed and a liquorice tube is stuck in the middle of it for sucking through or dipping into the sherbet. It is then wrapped in a bright yellow paper with large red writing in it. Just seeing the packaging can already trigger those memories of your childhood together with your mom buying sherbet fountains and enjoying them together.

How to Make Some Delicious Cherry Cheese Bars

Just the title of this dessert is enough to make one's mouth water! Cherry and Cheese, wow! Whether for dessert, a coffee klatch, church potluck, etc, these Cherry Cheese Bars will be a big hit! These bars will satisfy everyone from the youngsters to the grandparents. Treat your family and/or friends soon! We have also included directions for making this recipe diabetic friendly, if desired.

CHERRY CHEESE BARS
CRUST:
1 cup walnut pieces, divided
1 1/4 cups all-purpose flour
1/2 cup firmly packed brown sugar
1/2 cup butter flavored shortening
1/2 cup flaked coconut

Preheat oven to 350 degrees. Grease a 13 x 9 x 2-inch baking pan and set aside.

Coarsely chop 1/2 cup of the nuts for topping; set aside.

Finely chop the remaining walnuts.

In a medium bowl, combine the flour and brown sugar. Cut in the butter flavored shortening until mixture forms fine crumbs. Stir in the finely chopped walnuts and the coconut; mix well. Remove 1/2 cup of the crumb mixture and set aside. Press the remaining mixture onto the bottom of the prepared pan. Bake at 350 degrees for 12 to 15 minutes or until the edges are lightly browned.

FILLING:
2 pkgs (8-oz each) cream cheese, softened
2/3 cup granulated sugar
2 eggs
2 tsps vanilla
1 can (21-oz) cherry pie filling

In a small mixing bowl, beat cream cheese, sugar, eggs and vanilla at medium speed until smooth. Spread over the hot baked crust and return pan to the oven. Bake another 15 minutes. Remove from oven and spread the cherry pie filling over the cream cheese layer. Combine the reserved coarsely chopped walnuts and the reserved crumbs. Sprinkle the mixture evenly over the cherries. Return to the oven and bake for another 15 minutes. Cool. Refrigerate for several hours before serving. To serve, cut into 36 bars.

NOTE: You can make this recipe diabetic friendly by substituting 1/4 cup Splenda Brown Sugar Blend for the brown sugar in the crust. For the filling, substitute an equal amount of Splenda granular for the granulated sugar. Substitute "No sugar added", Splenda sweetened cherry pie filling.

Enjoy!

Modcloth Style Short - Doodles and Dress-Up

My sister (Stephanie) and I (Christina) are completely obsessed with Modcloth! So when I heard about this contest, I knew we had to make a video to show off at least part of our extensive Modcloth wardrobe. No, this isn't all of our Modcloth clothing, but it's a decent portion of it. There is nothing we wear in this video that isn't Modcloth. I know it's a little unsteady for a stop motion animation, but we don't have a tripod. We tried though! Video and Music editing are done by me! The clothes used in this video include: Hanging on the Telephone Tee, Banana Sundae Heels, Gift Registry Heels in Chocolate, Postmodern Peep Toes, Ballet School Flats, Hamptons Party Slingbacks, Sorbet Skirt, It's a Bow-tiful Day Belt, Ms. Peanut Dress, Pomegranate Dress, The Clueless Skirt In Dionne, Battalion Jacket In Black, The Right Said Wedges, A Bird to the Wise Necklace, Rat-a-Tat Hat, My Pet Octopus Necklace, Kissed Me Dress, Buon Giorno Scarf in Toscana, The Vest Around, Really Mint It Dress, Weekend In the City Dress, and the Floutingly Formal Necklace. =) PS In case nobody noticed, we're both in the video! Stephanie takes my place around 1:07.
