One of their many intriguing flavors is "Malted Milk Ball."

Sweet Spot (256 Great Island Rd., Narragansett): Whether you fancy mud pie, chocolate chip, or cookie dough-you can take your lickin' outside on the deck which overlooks Point Judith Harbor, enjoying an ocean view while fishing vessels come in and out of the harbor.

An Ode To Margaret Thatcher - How Soft Serve Ice Cream Is Made

Growing up in Midwest America, there is one thing that always brought a smile to my face: soft serve ice cream. I was and remain a very healthy individual, but there was something about this delectable dessert, covered in those scrumptious wonders known only as "sprinkles" that I couldn't resist. But from an early age, I always wondered, "How is soft serve ice cream made?" And, perhaps more importantly for me at that time, how could I possibly buy once of those magical devises?

But wait. What does this personal anecdote possibly have to do with Margaret Thatcher.

I'm getting there. But I digress.

Many years later, while I have shook off the shackles of my soft serve infatuation, I still wondered. It turns out that the story of soft serve ice cream has an interesting origin involving one of the twentieth century's greatest Cold War politicians, Margaret Thatcher. In the mid-20th century, she worked on a chemical research team in Britain, uncovering a method of dramatically increasing the amount of air in ice cream---allowing manufacturers to use less of the actual ingredients and reducing their costs per serving significantly.

Does that mean that my lust for soft serve ice cream was hot air? Well, maybe, but I dug further.

Generally speaking, soft serve ice cream is a slightly different form of ice cream that is dispensed from a machine instead of by hand. Significantly lower in fat content than traditional hard ice cream, soft serve is produced at a warmer temperature than ice cream, resulting in a special property that can explain its unsurpassed taste. By having a warmer temperature, the human taste buds can actually detect more flavor.

As you may have guessed, the proper combination of temperature and air is fundamental to the taste of the finished product. Soft serve produced with lower amounts of air results in a icy, heavy tasting product. On the other hand, soft serve produced with higher amounts of air typically taste creamier, smoother and lighter. Generally speaking, the air content should optimally be between 35 percent and 45 percent of volume. Like traditional ice cream, soft serve ice cream must be frozen quickly to avoid crystallization.

Now that I've finally unlocked the mysteries of the magic ice cream machines, I'm off to satisfy my sweet tooth. Thank you Margaret Thatcher.

The Summer Diet

Most of the people want to take up a diet from time to time because they feel uncomfortable with their body. Here are a few pieces of advice for a healthy diet, whichever your weaknesses might be.

You might not be a great fan of cooked food and you might like snacks and sweets more. Replace the breakfast muffin with a healthy fruit salad. French Ice Cream Sundae Desserts

French ice cream sundaes might include any combination of flavors, sorbets, syrups, nuts and even alcohols. There really is no limit. However, there are some popular combinations that you are quite likely to find on the menu if you visit an ice cream parlor (glacier) in France. These classic sundaes are easy enough to reproduce at home. Add on a fancy French name, and you will have an elegant dessert ready in no time.

Coupe Tutti Frutti - A combination of different sorbets (for example, pear, peach, or pineapple) with different fresh fruits (for example, strawberries, grapes, melon, or pineapple), topped with whipped cream and fruit syrup.

Coupe Colonel - Watch out - the colonel has a bite! Lemon sorbet topped with vodka.

Dame Blanche - Just a simple vanilla ice cream topped with chocolate sauce and whipped cream. The elegance is all in the name.

Peche Melba - This was invented by the renowned French culinary authority, Auguste Escoffier, in testament to his admiration for Nelly Melba, who was a popular turn of the 20th century Australian opera singer. Vanilla ice cream, poached peaches, and raspberry sauce. These days you are likely to find your peche Melba topped with whipped cream as well.

Poire Belle Helene - Another cold dessert inspired by the opera - this one commemorates the presentation in 1864 of La Belle Helene, an operetta by Jacques Offenbach. Vanilla ice cream, poached pears, and chocolate sauce.

Profiteroles - This is not a sundae, but you will find it frequently offered on the menu in a French glacier. Cream puffs are typically filled with vanilla ice cream and drizzled with chocolate sauce.

Ten Top Tips For Creating Canapes

Canapes are crucial for a truly fabulous party. Every guest's first impression, they are perfect for setting the tone and getting people in the party mood! A bit like the cocktail of the food world, they can be fun and frivolous and downright decadent, but don't think they have to be hard to create. We have compiled a few tips for creating simple yummy canapes at home, and a few pointers on the next 'little' thing in canapes from one of the UK's top catering companies too!

If you are making canapes for a party at home, then keep it fairly simple but still stunning by following these five tips:

1. If you stick to seasonal produce, then the most basic food can speak for itself - consider delicious seamed new season's asparagus drizzled with melted butter and lashings of salt and pepper, and with homemade hollandaise to dip.

2. Think creatively with your serving vessels - use little spoons or shot glasses to serve, or try rosemary skewers for lamb.

3. Remember that pretty much every favourite dish can be made in to a tiny mouthful with a bit of thought. Shrink down the classic roast beef into a mini Yorkshire, with a sliver of rare beef, and some horseradish cream.

4. If you don't want the trouble of making a main course bite sized, then think about using food that is already bite sized - cherry tomatoes filled with delicious creamy buffalo mozzarella, or king prawns tossed in chilli and lime skins, served with big bowls of homemade mayonnaise.

5. And don't forget your pudding canapes - they are the easiest to make! Any tray baked biscuit or cake can be cut up into bite sized mouthfuls - try chocolate brownie dusted with edible glitter for that party feel, and don't forget fruit skewers with bowls of melted chocolate on the side.

If you are lucky enough to be using a caterer to create your canapes, then these ideas from "rhubarb" food design's Menu Consultant Phil Owens, might help you make some crucial canapes decisions for your parties in 2010.

6. Think about cool cocktail canape sorbets on elegant spoons - try strawberry margarita sorbet with fresh strawberries and edible flowers. Delicious and refreshing.

7. Try creamy seasonal risotti in crisp cornets - in fresh and rich flavours such as asparagus with taleggio, or heirloom tomato with mascarpone and basil.

8. Make things pretty as a picture with melt in the mouth savoury beetroot macaroons with creamed goat's cheese and pain d'epice.

9. For really incredible taste sensations, "rhubarb" like to work with intense vegetable and fruit powders - try crayfish brandade scented with tomato powder on a lemon puree.

10. And finally, don't forget more substantial canapes or bowl food. They still feel special, but you get a lot more from your caterer for your money and they are great for guest's favourites too - mini bowls of bangers and mash everyone?

Easy Raw Food Recipe Secret - How to Make Healthy Pineapple Ice Cream! - Free Raw Recipe

If you want to eat healthy but still enjoy ice cream-like desserts there is a great, easy, raw pineapple ice cream dessert you can make. Raw fooders have been making this ice cream for a long time and it's a great standby raw recipe. It isn't really made with cream but the texture is that of ice cream, sorbet or sherbet. Pineapple is one of most nutritious foods on the planet. It contains carbohydrates, proteins, fats, water, calcium, phosphorous, iron, magnesium, potassium, sodium, chlorine, sulphur and manganese. It has high amounts of vitamin C and has vitamin A, B1 and B2 among others. The proteolytic (protein-digesting) enzyme bromolain (sometimes spelled bromolin) is responsible for healing and curing many diseases and conditions and new discoveries are made for it all the time.

Pineapple can stop or lessen inflammation in the body. It's been used for arthritis - both osteoarthritis and rheumatoid arthritis, and to help repair tissues after injuries. It's best made in a Champion juicer or Green Life, Green Power or Green Star Juicer or any juice extractor that has a homogenizing blank, however, it can be made in a food processor too. Centrifugal type juicers usually won't work though - the mass market kind. You can try it if you have a juicer.

If you have a Trader Joe's in your area you can easily find frozen pineapple tidbits they have in the frozen food case. Or you can use frozen pineapple from any other store it doesn't matter. If you can't buy frozen pineapple you can buy fresh chunks and freeze them or cut up fresh pineapple and freeze them.

I've found fresh pineapple from Costco seems to be the cheapest running around $3 per pineapple. Produce people have told me they grow like weeds in Hawaii and it's doubtful they're sprayed with chemicals. Cooked or canned pineapple won't work and don't contain bromolain, which is destroyed when it's heated.

So take any amount of frozen pineapple and put it in the Champion juicer with the homogenizing blank or Green Life, Green Power or Green Star with the homogenizing blank or just use a food processor. In the juice extractors just run it through. In the food processor process it fast until creamy and quickly remove and refreeze.

You can also run frozen raspberries through after the ice cream and swirl some through or on the top of the pineapple ice cream for a nice effect.

You'll magically have made the healthiest pineapple ice cream, sherbet or sorbet raw recipe on the planet and nobody will know they're eating healthy, unless you tell them of course. This raw pineapple recipe is so easy and so good for us!

Don't Get Cranky Over Homemade Ice Cream

Just the other day I was remembering how when I was a kid I always thought it was so fun to help mom and dad or my grandparents make homemade ice cream. What a thrill! And it is truly hard to beat the taste of it; even if you buy the best store bought brands.

If I knew early in the morning that we were going to make ice cream later in the day, it was like waiting for Santa Claus to show up; it seemed like the time would never get here. I could just taste that rich vanilla flavor all day long before we even made it, and on top of that I was going to be one of the lucky ones who got to crank the handle on the ice cream maker. What joy!

Yeah, right. Try to get me to do that today. I have a hard enough time making myself crank the handle on the commode. But isn't it weird how things change as you get older. That was fun back then, but it would be way too much work now. I definitely don't think it would be worth the effort. It would be too much like churning butter, also not worth the effort.

Of course, it wasn't long after those times that the motorized version came out and the days of handle cranking were soon gone; for me, at least. But, you still have to keep adding the ice and the salt to help the ingredients to freeze.

But, that isn't too bad. I mean, it is fun to sit around the barbecue pit soaking up some suds with friends and family and enjoying some laughter while anticipating the big treat to come. And let's face it, while you're sharing a few drinks with them, tossing some salt and ice in a bucket already kind of fits right in, doesn't it?

But now they make these fancy ice cream makers that you don't have any handles to crank, and you don't even have to keep adding salt and ice to freeze the mixture. These higher end models have their own built-in freezer so you don't even need to pre-freeze the container nor any of the ingredients. I think we are on to something here!

Not only that, but these frozen dessert machines make all kinds of cold stuff, including gelato (an Italian frozen dessert), sorbet (a flavored ice), frozen yogurt, slushes and more. And they make them fast, too. Most of these appliances will have dessert on your table in 30 to 45 minutes. Yep, now we are definitely getting somewhere!

So, let's go over the options again:

- crank a handle for an hour or two (fat chance)

- have kids and let them do the handle cranking (yikes!)

- pack ice and salt around the container in an electric ice cream maker (mmm, maybe)

- or buy a new fangled one that does the dirty work for you (costs more money)

I guess I'll go with the last option. That's mainly because at this stage in my life I feel cranky enough and I don't feel like sharing my ice cream with any kids. ;)

Pop-up barrier bewilderment in London

Amazing new hedge labyrinth in Trafalgar Square, Free and fun. I 'did the maze' today, 5 August, and it was fun. Londoners were so polite and let my friend Marijke and her 93 year old dad jump the long queue. He is a WWII veteran. Every little corner has plaques explaining the eccentric history of London landmarks. It is a real hedge and is even budding little berries and new shoots! At the end of the maze you land in a sort of courtyard where a jazz duo is playing. Afterwards my friends and I went to a new ice cream parlour behind St Martin in the Fields church and had chocolate sorbet, which you cannot get anywhere else in the UK. I'll try to post a better video clip tomorrow. i wish my mobile could transmit clips higher than 300k

Summer Entertaining Idea - Acai Berry Sorbet

With summer in full swing, many people will be entertaining and feeding guests. After the delicious BBQ or other meal, many hosts will want to serve a dessert to end the meal on a sweet note. On these hot days and warm summer nights, many hosts will be thinking of cold desserts: ice-cream, sorbet, gelato, etc. These desserts are favorites of summer, and for good reason.

On the other hand, many guests are health conscious these days. People don't want empty, sugary or fat calories. Many hosts, in response to this are serving fruit based sorbets rather than more fattening ice cream. Sorbets are delicous, refreshing frozen fruit pulps. They are natural and nutritous. What could be better?

Well here is the tip. One of the latest heath trends it to increase the consumption of anti-oxidants. Anti-oxidants are compounds that occur naturally in many foods. Anti-oxidants have the capability to inhibit the damaging action of free radicals. Nutritionists tell us that a lot of cell damage is caused by the destructive action of free radicals, and they recommend eating 3000-5000 ORAC units per day (ORAC is Oxygen Radical Absorbance Capacity- a means of indexing the anti-oxidant capibility of foods).

Normally in Brazil , the acai bowl is served with sliced bananas and a sprinkle of granola.

As for cost, based on the 7.2 pound size (about 36 servings) priced in July 2008, the cost is 39.4 cents per ounce. One serving is considered 100 grams (about 3.4 ounces). I surveyed sorbets from netgrocers.com, and they ranged from 33.7 (Haagen Daaz raspberry) to 42.2 (Cia Bella Raspberry) cents per ounce. Frozen fruit purees of raspberry went from 43.1 cents per ounce to $1.42 per ounce on different websites!
