Delicious Desserts That Are Easy to Prepare

There is an art to dessert making, and if you get it exactly right, it will be that course that you remember most about a meal. Forget the Cheese and biscuits; a delicious dessert really finishes of a meal in style.

I consider myself a bit of a dessert connoisseur; having eaten so many of them in the past. I eat them hot or cold, so here are a few suggestions for desserts you may like to try.

Some of these may already be your favorites, but hopefully there will be some new ones here for you to try too. Why not try them at home adding your own personal touch?

You may make chocolate mousse on a regular basis, but how often do you use white chocolate? You may not feel as if it will taste like a real mousse, but trust me, it is. You may well end up preferring the white version.

Be a bit more adventurous with your chocolate mousse next time you make it. Most of us like summer fruits like Raspberries, so why not drizzle some into the mousse to give the chocolate a bit of fruitiness.

If you think along the same lines like me and want your dessert to look great, you can create wonderful cocktail from ingredients like ice cream using a martini glass.

If you are having guests round to dinner, why not really let your imaginations run riot and produce colorful desserts in a glass that look so good, the compliments will flood in.

Cutting a mango into a rose may sound really difficult, but have a look at the instructions on the internet and you will soon be able to do it yourself really easily. Then just add the filling for a beautiful looking dessert.

Fruit with sorbet or ice cream is always a favourite, and this tasty take on that is simply delicious. Whether using Vanilla or another stronger flavor, this dessert will taste as good as it looks.

Fitness Tips For Baby Boomers - Do You Know the 8 Steps to Pack on Heaps of Muscle Super Fast?

A major of goal of many fitness enthusiasts is the quest for more lean muscle as fast as possible. The first key is that of progressive weight resistance, better known as bodybuilding with barbells and dumbbells. The second key is how and what you eat, placing a great emphasis on protein-intake. In this article, I will show you little known secrets outside of the world of professional bodybuilding of how to add lean muscle-size to your frame almost overnight.

The 8 Steps To Pack On Heaps of Muscle Super-Fast:

The 8 steps that I will refer to here are about how to break up and organize your day such that you are eating 8 small, protein-packed meals about every two hours with the amazing result of your obtaining almost 300 grams of protein a day. With the example below, it is 298 grams of protein to be exact and over 3000 total calories. You see, to gain muscle-mass, you need to eat the equivalent of about 1 to 1 1/2 grams of protein per pound of body weight. This is not an easy feat to do haphazardly and without a well-thought out plan. What follows is based on an 180-pound man. The schedule and the diet is a representative sample of how you might go about and design your own.

Step 1 - 6:00 a.m. Breakfast 1 (Upon Awakening) - Drink a glass of 2 scoops of whey protein powder and water and eat one apple.

Step 2 - 8:00 a.m. Breakfast 2 - Eat 3 large scrambled egg whites prepared with a low-calorie non-stick cooking spray, 1 cup of oatmeal with cinnamon and non-calorie artificial sweetener and 1 cup of green tea.

Step 3 - 10:00 a.m. Morning Snack - Eat 8 oz. of plain yogurt mixed with 1/2 cup of blueberries.

Step 4 - Noon - Lunch - Eat 4 slices of sprouted bread, 1 cup of red bell pepper, 2 cups of spinach. Mix the spinach and bell pepper with a tbsp. of virgin olive oil, and follow this with a cup of green tea.

Step 5 - 4:00 p.m. Pre-Workout Meal - Ten or fifteen minutes before you begin your weight training body workout, drink a cup of black coffee ( sweetened with a non-calorie artificial sweetener if desired). Drink an 8 oz. glass of water mixed with 1 scoop of whey protein powder, and eat a diced apple.

Step 6 - 6:00 p.m. Post-Workout Meal - Drink an 8 oz. glass of skim milk (or soy milk if you happen to be lactose-intolerant like me) mixed with 1 scoop of whey protein powder. Have a large baked potato, skipping the butter, sour cream and chives; just a little pepper and salt to taste if sufficient. You may also treat yourself with a 1 oz. piece of dark chocolate.

Step 7 - 8:00 p.m. Dinner - Eat a 6 oz. broiled breast of chicken (no skin of course). Accompany this with 1 cup of broccoli, 1 cup of cooked brown rice and a non-fat raspberry sorbet for dessert. You can follow this with a glass of iced tea sweetened with a non-calorie artificial sweetener.

Step 8 - 10:00 p.m. Before Bedtime Snack - About 10 to 15 minutes before you retire, have 8 oz. of 1% low-fat cottage cheese along with 1 oz. of pecans.

When you look at this you may say, "Holy smokes, that's a lot of eating!" but in 90-days after staying on this program, people will say, "Holy smokes, that's a lot of muscle!"

The 8 Steps To Pack On Heaps of Muscle Super-Fast:

The 8 steps that I will refer to here are about how to break up and organize your day such that you are eating 8 small, protein-packed meals about every two hours with the amazing result of your obtaining almost 300 grams of protein a day. With the example below, it is 298 grams of protein to be exact and over 3000 total calories. Step 3 - 10:00 a.m. Morning Snack - Eat 8 oz. of plain yogurt mixed with 1/2 cup of blueberries.

You Don't Have to Stop Eating Out Because You Are On Diet

Diners have become more health-conscious the last few years, and
now want healthy choices whether eating at home or at their
favorite restaurants. Luckily, the restaurant industry has been
quick to accommodate the demand, so you'll find you have many
options to "eat healthy" these days.

Whether you're eating at home or dining out, the same rules for
watching your weight apply. You need to eat more vegetables,
fruit and whole grains. Choose smaller portions of lean meats,
fish and poultry. Eat a variety of foods, and fresh, raw foods
are better. Cut back on salt, sugar, saturated fats and alcohol.
Drink plenty of water, and include exercise every day as part of
your daily lifestyle choice.

So whether you're having lunch with the gang, or enjoying a
romantic dinner for two, you can enjoy delicious-tasting foods
that are low-in calories and good for you, with just a little
forethought and planning.

Here are some easy tips to remember when ordering out that will
help you to lose weight even when eating at your favorite
restaurants:

1. If you know the menu from the restaurant you're going to, plan
what you're going to have ahead of time. This will help save you
from making a last minute decision that could result in
high-calorie choices.

2. Drink at least one full-glass of water or iced tea before
eating your meal. This helps your digestive process, and,
because you'll feel full sooner, you will eat less.

3. Don't be afraid to ask for the "senior citizen" special or
kid's-sized portions. Most restaurants will accommodate you --
and often you'll pay less as well!

4. Order first. That way you're much less likely to be influenced
by the choices of your companions.

5. If you're not sure how something is prepared, don't be afraid
to ask. And if the dish is cooked in oil or butter, you can
always ask if they have a "fat free" option.

6. If everything on the menu is high in fat or calories, ask if
the chef could prepare a plate of fresh fruit and vegetables.
Many restaurants offer a vegetarian selection, so if you don't
see it on the menu, ask.

7. When ordering meat or fish, ask that it be grilled or broiled,
and prepared without oil or butter. (When you eat it, use lemon
or herbs and spices to give it flavor rather than heavy sauces).

8. Order an appetizer and a salad as your meal. Or a soup and
salad. For dessert, choose fresh fruit.

9. When choosing soup, remember that cream-based soups have many
more calories than broth-based ones.

10. If you're having a full meal, split the appetizer and desert
with your companion.

11. If you decide to order pasta, tomato sauce has fewer calories
than cream-based sauces, just like soup.

12. Choose breadsticks over bread, or if you eat bread, don't add
butter. Stay away from muffins and croissants, and choose whole
grain over white.

13. Choose steamed vegetables instead of baked potatoes or other
starches. Again, use lemon and herbs and spices rather than
butter to flavor them with.

14. Whenever possible, eat like the Europeans do, and have your
biggest meal at lunchtime. Not only will you save money, but
you'll cut down on calories at the same time!

15. Take the time to enjoy your meal. Savor the flavors and
textures of your food, and enjoy the company you're with. When
you eat slowly, you give your body's internal clock the time it
needs to know when you've had enough. When you're full, stop
eating. Ask your server to remove your plate so you're not
tempted to keep eating while you wait for your companion to
finish.

16. Ask for salsa on your baked potatoes, rather than sour cream
and butter. Not only is salsa much lower in calories, but it
adds a "spicy" flavor to potatoes.

17. Order salad dressings and sauces "on the side." This gives
you more control of how much to use. Another tip for salad
dressing -- rather than pouring the salad dressing on your salad,
dip your fork into the dressing first, and then into the salad.
You'll get the same amount of flavor, without all the added
calories!

18. Choose brown rice over white rice (or french fries), whole
grain breads and rolls over white. Not only are they lower in
calories, but they are better for you.

19. Stay away from "all you can eat" buffets and salad bars. It's
too easy to lose track of the amount of food you're eating, even
when it's salads. If that's your only choice, then stay away
from the pasta, marinated salads, cheeses and fruit salads with
whipped cream. Stick to soups, raw vegetables and fresh fruits.

20. Have your soup first. It will help to fill you up, and most
soups have fewer calories.

21. If you're craving something sweet, and don't want fresh
fruit, choose sorbet. If you absolutely HAVE to have the
chocolate sauce, use the same trick as you did with the salad
dressing -- dip your fork into it first, then your dessert.

22. Split your dessert with your companion. You'll still feel
like you got to be indulgent, and you'll only have to exercise
half as long to burn off the extra calories!

23. When ordering sandwiches, order them with mustard only,
rather than mayonnaise. Not only does mustard have almost no
calories, but you won't miss the mayo!

24. If the portion you were served is large, only eat half of it.
Take the other half home. Not only will you get two meals for
the price of one, but you'll cut the calories in half as well!

25. Go for a walk after eating. Stroll along the beach, walk
through a park, visit a zoo. You'll burn calories and get your
exercise at the same time!

Low Fat Ice Cream Recipes - or rather a sorbet recipe?

If you are looking for recipes for low fat ice cream, there are usually a few different species to pop. People begin to wonder, sherbet or sorbet, and more. I think no role at all. For me, if I have an eye for ice recipes low fat cream, the technology does not matter as long as it is low in fat, and delicious, I'm happy.

Rhubarb and orange water ice

Ingredients:


12 ounces rhubarb
1 medium orange
1 tablespoon clear honey
1 tsp (1 sachet) powdered gelatine
Orange slices to decorate

Method:


Cut the rhubarb and cut into 1in lengths.
Put the slices in a pan without adding water.
Finely grated orange peel and squeeze the juice.
Add about half oforange juice and all the grated rind to the rhubarb in the pan and allow to simmer until the rhubarb is just tender.
Stir in the honey.
Heat the remaining orange juice and sprinkle in the gelatin to dissolve it.
Stir into the rhubarb.
Place the mixture into the cylinder of an ice cream maker and freeze according to the manufacture's directions.

Or if you do not have an ice cream maker proceed as follows:


Turn the whole mixture into a rigid freezer container and freeze it for about 2 hours until slushy.
Remove the mixture from the freezer and beat it well to break up the ice crystals.
Return to the freezer and freeze again until firm.
Allow the water-ice to soften slightly at room temperature before serving.

About the rhubarb: Most pink, forced rhubarb is naturally quite sweet, but if yours is not, you can add more honey, sugar or artificial sweetener to taste.

This is a delightful dessert after a heavy meal. So, even in the winter, when we so often serve heavy rich meals, this will make a tasty dessert. But, if course, you do not only have to serve it as dessert, it will also be very tasty to clean the palate b between courses.

Almond Spice Cake

Ingredients

1 / 2 cup sugar + 1 dsp

1 / 2 cup plum + 1 dsppureed

1st Preheat oven to 350 degrees F. Coat a loaf 8 1 / 2 x 4 1/2-inch baking pan with a jet of low fat content.

2A with an electric mixer, beat sugar with plum puree, margarine, and both the almond and vanilla extracts for 2 minutes.Beat the egg and egg whites for 1 minute.

3rd In a separate bowl combine the flour, baking powder, spices and salt. Add to the mix of prune in connection with the milk, in full, a combination of ingredients.

4th Spoon batter into the pan covered. Bake for 1 hour or until a toothpick comes out clean.

5th Cool in pan for 15 minutes, then turn out and cool on a rack.

Diet Coke Cake

A favorite in the South, to sweeten this simple cake recipe uses Diet Coke and expand the ingredients.

Ingredients

1 18-oz package chocolate cake mix

1 can of diet cola

Spray a 13 "x 9" square cake pan with low fat cooking spray. Mix coke with cake mixture in a large bowl about 30 strokes. Pour into pan and bake according to package instructions.

Baked apples

A traditional holiday treat. Groped use or RomeDelicious apples for best results.

4 large apples, washed, animated, seeded, and removed 1 / 2 "from the bottom of the apples. The holes should be about an inch.

3 tablespoons brown sugar

1 teaspoon cinnamon

3 tablespoons chopped walnuts

2nd Pour the boiling water into baking pan and bake at 375 º C for 30-40 minutes, until soft. Be careful not to overbake or the apples are soft.

3rd Remove from oven and pour the sauce over the apples a few times.

Serve with vanilla low fat ice mounted or low-fat topping.

Blackberry Sorbet

An elegant and refreshingWay to end a meal.

Ingredients

1 / 3 cup + 2 tablespoons sugar

3 / 4 cup + 2 tablespoons + 1 tablespoon cold water

1 1 / 2 cup + 1 tablespoon + 1dsp blackberries, fresh or frozen and partially thawed

1 teaspoon orange juice

Directions

1st In a large saucepan, combine sugar and water and stir until sugar is completely dissolved, about 5-10 minutes.

2nd Add blackberries and bring to boil. reduce heat and let simmer until the berries are soft, about 5 minutes.

The mixture of 3rdthe cooking pot and let cool completely. Place cooled mixture in the freezer and freeze until completely set (about eight hours).

4th With a fork, break frozen mixture into pieces and passed through a food processor or blender until smooth.

5th sorbet can be served immediately or frozen. If frozen, remove from freezer to thaw for about 15 minutes before serving, until soft enough to serve.

For 8 servings.

Mini-chocolate-banana ice cream

Ingredients

2 tablespoons + 2 teaspoons of grated dark chocolate

DSP 4 + 4 teaspoons cold water

1 banana, thinly sliced

3 / 4 cup + 2 tablespoons + 1 tablespoon of yogurt or low fat seal mounted.

In a saucepan, bring to boil 4 tablespoons of water and pieces of chocolate. Glatt mix add. Drizzle evenly over the sliced banana and low-fat yogurt or seal mounted.

Healthy(er) Cake Recipes

In today's health-conscious world, it can be a challenge to find tasty treats to enjoy and still be mindful of your figure. But by employing a few strategic substitutions and/or additions to your favorite desserts, you can indulge both your sweet tooth and your waistline. For example, by using reduced-fat milk products in place of whole milk, and egg whites instead of a whole egg, you can cut down your cholesterol intake considerably. Using fruits and fruit juice as sweeteners instead of sugar not only reduces calories, but also provides extra nutrients like vitamins and fiber.

Need some ideas to get started? Here are five recipes for scrumptious, guilt-free desserts guaranteed to satisfy both your conscience and your inner gourmand:

Almond Spice Cake

The prunes in this recipe add a sweet, moist richness, as well as vitamins and fiber.

Ingredients

1/2 cup + 1 dsp sugar

1/2 cup + 1 dsppureed prunes

3 tbsp margarine, softened

1/2 tsp almond extract

1/2 tsp vanilla extract

2 egg whites

1 egg

2 tsp baking powder

2. With an electric mixer, beat together sugar with prune puree, margarine, and both the almond and vanilla extracts for 2 minutes. Beat in egg whites and egg for 1 minute.

3. In a separate bowl combine the flour, baking powder, allspice, and salt. Add to the prune mixture in conjunction with the milk, fully combining the ingredients.

4. Spoon batter into the coated pan. Bake for 1 hour or until a toothpick comes out clean.

5. Cool in the pan for 15 minutes, then turn out and let cool on a wire rack.

For an added culinary flair, top this pound cake with fresh prunes and reduced-fat whipped topping. Serves 10.

Diet Cola Cake

A favorite in the South, this easy cake recipe uses diet cola to sweeten and expand the ingredients.

Ingredients

3. Remove from oven and pour the pan juices over the apples a few times.

Serve with low fat vanilla ice cream or low fat whipped topping.

Mini-Chocolate banana sundae

A healthy treat that kids are sure to love.

Ingredients

2 dsp + 2 tsp semisweet chocolate chips

4 dsp + 4 tsp cold water

1 banana, thinly sliced

3/4 cup + 2 tbsp + 1 dsp nonfat yogurt or low fat whipped topping.

In a small saucepan, bring 4 tablespoons of water to a boil and add the chocolate chips. Stir until smooth. Drizzle over the banana slices and top with yogurt or low fat whipped topping.

4. Cosmic Curried Kale
Everyone should eat more greens in their diet anyway, so this recipe is vegan-friendly and also all raw for those super health food fanatics like my good friend Jill from Minnesota! She calls it Cosmic Curried Kale. She de-stems and washes the curly kale, puts it in a bowl with a shredded carrot, then blends together 1 part Nama Shoyu (raw soy sauce), 1 part lemon juice, 1 part olive oil, 2 cloves garlic, and adds cumin and coriander for the dressing. Super simple and totally organic!

5. Cookoo for Cocoa Pudding
We all love chocolate, and the classic chocolate pudding is no exception. Even vegans can enjoy this well known dessert. Mix 2 cups soy milk with 3 tablespoons organic cocoa, 5 tablespoons cornstarch, 1/2 cup sugar, and 1 teaspoon vanilla until smooth. Cook it over medium heat until it becomes thick. Pour it into serving dishes and chill in the fridge! Now that's super easy and should satisfy any chocolate lover's cravings!

My all time favorite frozen dessert maker is the Cuisinart ICE-20. It is an 1-1/2 quart automatic ice cream, frozen yogurt and sorbet maker. It costs $50, which sets it about at the middle price range for frozen dessert makers. Given my experiences with it, and all the other positive reviews on Amazon.com and other places, it is definitely an excellent choice. I did have to seek out some recipes -- the ones the ICE-20 comes with are so-so at best. So far, the best ice cream recipe book I've found is the one put out by Ben and Jerry (no big surprise there), titled "Ben & Jerry's Homemade Ice Cream & Dessert Book".

By far the highest rated ice cream maker on amazon, the Cuisinart ICE-20 comes in both white and red. It can make 1 1/2 quarts of any frozen dessert. The instructions say it makes ice cream in 20 minutes, but that's never happened for me. There may be some crystals forming in 20 minutes, but if you don't want cream soup by the time its in the dish, give it 30 minutes.

Be careful about overfilling the container -- as the mixture gets firmer, it will start to creep up the sides of the bowl, and if you put in too much (or put in what the recipe suggests, then drop in a cup of nuts, for example) you could walk into your kitchen to see sticky goo making its way down the outside of your machine. Another thing to be careful about is the noise. The ICE-20 is too loud to make a batch during a formal dinner, or after everyone's gone to sleep. Mine is nearly as loud as our vacuum.

If you tend to overindulge and need to make more than 1.5 quarts at a time consider getting a second bowl. Homemade desserts are a wonderful thing (no preservatives!), but it is a wee bit time consuming. Making a double batch is much more efficient. Having a second bowl also makes it possible to make two flavors, which is great if you are having a party or bringing a dessert to a party. Get a few of the reusable plastic containers for $1 or so each at the grocery store and keep them on hand if you need a quick gift.

I also highly recommend you find room in your freezer to keep the bowl. We've found making ice cream is a spontaneous, spur of the moment sort of thing. Waiting six hours for the bowl to freeze is not spontaneous. You also need a second bowl because you can really only make one batch per "chill".

Ice Cream Makers for Camping

One ice cream maker that requires no electricity is the Play and Freeze Ice Cream Maker, available at Walmart for $38. To use this soccer-ball shaped frozen dessert maker, fill one compartment with cream, sugar and flavoring, and the other with rock salt and ice. Then roll it around for 30 minutes (an excellent way to wear out children... just don't let them kick it or abuse it too badly... ) and voila: ice cream.

LL Bean has a very similar camping frozen dessert maker that comes in several different colors. If you want to make ice cream but have no access to refrigerator, or ice, (like while you're setting up camp on a mountainside) either the LL Bean or the Play and Freeze ice cream makers are for you.

Acai Palm Berry: Super Food

The Acai (pronounced ah-SAH-ee) berry is the latest super antioxidant food sweeping the world. This small round fruit is produced by the Acai Palm which is native to Central and South America floodplains and swamps. The fruit is rich in anthocyanin / anthocyanidin phytonutrients which are members of the flavonoid class of antioxidants. The dark purple berry, which tastes something like a blend of berries and chocolate, supposedly contains 10 to 30 times the flavonoids contained in red wine. The pulp is also rich in B vitamins, minerals, protein, Vitamin E, caffeine, fiber and essential fatty acids (such as Omega-3, Omega-6 and Omega-9). This wonder food is purported to fight cancer, control cholesterol, increase energy, improve your sex life and help you lose weight. The University of Florida is studying its cancer fighting properties and Dr. Nicholas Perricone has recommended it as one of his "top 10 superfoods for age-defying beauty" on Oprah Winfrey's talk show, and in an article in "Oprah" magazine and also in his book "The Perricone Promise". This little berry has been touted as one of the most nutritious and healthy foods in the world.

The studies being conducted at the University of Florida have determined that the Brazilian berry destroys cultured leukemia cancer cells. This study was not intended to show whether acai berries could prevent leukemia in people as it was only a cell-culture model. This is not a unique effect as other fruits such as grapes, guavas and mangoes contained antioxidant products that also destroyed cultured cancer cells. A lot of claims are being made but research has just started on the acai berry. Another study is underway to investigate the effects of acai's antioxidants on human subjects.

The acai berry is a small dark blue fruit, similar in size to a blueberry or small grape but with less pulp, that grows in clusters or panicles of approximately 800 berries on Acai palm trees. The tribes of the Amazon knew of the health properties of this fruit for centuries and traditionally pulped it to make wine. The berries contain a thin layer of edible pulp surrounding a large seed. These palms are extremely prevalent in the floodplain areas of the Amazon River and are easy to cultivate as a replacement tree in areas where the rain forest has been destroyed. The slender palms grow from 40 to 80 feet tall and have leaves up to 10 feet long. Each palm can produce more than 50 pounds of berries annually. The harvesting of this powerful antioxidant rich product has become a major industry in Brazil and employs up to 30,000 people on a daily basis to harvest and process the product. Unfortunately the fruit deteriorates rapidly after harvesting (active properties can disappear after 24 hours) and so it is restricted to being eaten in the growing region or being processed and shipped as juice or frozen pulp. This industry has become an economic and environmentally-friendly alternative to unsustainable harvesting of hearts of palm, logging and conversion of the rain forest to farming or ranching. During the last decade in Brazil, acai has become a major food fad and Brazilians consume the frozen pulp alone or in yogurt, ice cream, smoothies, drinks, fruit or as a cereal topping. The frozen pulp tastes like a blueberry sorbet or ice cream with a hint of chocolate.

Acai can be difficult to find outside of South America although the frozen pulp and juices are starting to be imported into the US and Canada. Your best chance of finding the product is in health food stores or the health food section of your supermarket. Make sure that the acai berry is wild harvested and quickly frozen to retain its maximum nutrient value. Also in the US, acai is being sold as an ingredient in a number of beverages, and as frozen fruit that can be added to home-made smoothies as well as in health food extracts and supplements.

Smoothies and Frozen Drinks - Secrets to Making the Perfect Frosty Summer Drink

What's more refreshing than a frozen drink? If you're looking for a delicious, healthy snack your kids will love, then a smoothie is a great choice. Or if you want to serve cooling refreshments to your summer guests, then a frozen drink is a real party pleaser. But there's more to it than just tossing ingredients into a blender. Follow these secrets to making the perfect fruit smoothie or frozen drink and you'll become an expert!

1. Freeze the fruit ahead of time. It doesn't matter whether your smoothie recipe tells you to do this or not, this little trick will make for a thicker smoothie. Wash your fruit, cut in bite size pieces (slice bananas), spread out on a baking sheet in a single layer and freeze. When your fruit is frozen, you can pack it together in a storage bag or container in the freezer. For best results, use within 2 weeks.

2. Use fresh ripe fruit for the best flavor.

3. When the recipe calls for ice, crushed ice is best. If you don't have crushed ice, you can always place ice cubes in a sealable plastic bag on a cutting board and "crush" the cubes with a hammer, rolling pin, frying pan, etc.

4. The blending order is important. First add the cold liquid, then the fruit, and last add the frozen yogurt (or ice cream) or the ice.

5. Considering using a Smoothie Maker. They really work! Unless you have a powerful blender, it will labor when pulverizing ice.

How to Fix a Less Than Perfect Recipe: Making smoothies and frozen drinks is not an exact science. You can start with a recipe and always change and improve it. Here are some basic tips to adapt any smoothie recipe to your own tastes and requirements.

To make it thicker: Add more ice, frozen fruit (especially a banana), frozen yogurt, ice cream or sherbet

If it's too thick: Add milk, water, or juice and blend again. Be careful when adding a lot of juice, because it will change the flavor of the frozen drink.

To make it creamier: Use ice cream, frozen yogurt or vanilla yogurt instead of the ice.

To reduce calories: Replace whole milk with skim milk. Use frozen yogurt or sorbet instead of ice cream. Add fresh fruit instead of sweetened frozen fruit. Use a sugar substitute. Choose nonfat yogurt over regular yogurt.

To make it sweeter: Add honey, maple syrup, a little sugar (superfine or confectioner's sugar blends best) or Splenda.

If it's too sweet: add a little lemon juice or even lemonade.

To make it healthier: Add protein power or brewer's yeast available from the health food or vitamin store (and some supermarkets).

To add fiber: Add ground flax seed, wheat bran, wheat germ, and leave the skin on the fruit.

To make a frozen drink with alcohol: Substitute rum, vodka, or a fruit liqueur for an equal part of the juice or other liquid called for in the recipe. Pour into a margarita or hurricane glass and garnish with fresh fruit. However, if a frozen drink calls for alcohol and you prefer a non-acoholic beverage, simply substitute juice, milk or water for the spirits.

To add extra flavor: Use very ripe, quality fresh fruit. A little cocoa powder gives it a chocolatey flavor. Try a few drops of almond extract or some of the other fruit extracts sold in the baking section of the supermarket. Add a pinch of cinnamon or nutmeg.

Strawberry-Banana Smoothie 8 oz. vanilla or strawberry yogurt 1 1/2 cups fresh strawberries, frozen 1 whole banana 1 tablespoon honey

Orange Creamsicle Smoothie 1 cup orange juice 1/4 cup milk 2 cups orange sherbet 3/4 cup vanilla frozen yogurt

Peach Smoothie 2 cups peach nectar (juice) 1 cup peach yogurt 1/2 banana 1 1/2 cups frozen peach slices 1 cup vanilla frozen yogurt

Cantaloupe Smoothie 1 cup orange juice 1 tablespoon honey 1 teaspoon vanilla 2 cups cantaloupe, cut in chunks, frozen heaping tablespoon of vanilla yogurt ice cubes to thicken

Cappuccino Smoothie 1 cup brewed coffee 1 cup milk 1/3 cup granulated sugar 1 cup vanilla ice cream 2 cups crushed ice or ice cubes Garnish with whipped cream and a sprinkle of cinnamon

Summer Sorbet Recipe

Sizzling hot summer days whirl you out of the kitchen to cool places, beaches, pools, rivers and lakes. Food gets simple and moves away from the kitchen to an outside barbeque, as the kitchen stove gets too hot to handle. Sometimes however, you do feel the urge to make something delicious and beautiful for dessert. This citrus sorbet recipe served in the hollowed out peels of the orange, mandarin or lemon is the perfect thing to make for a summer celebration. The bright colours of the skins look cheerful, the sorbet is fragrant and refreshing. You can do all the work ahead of time and they can sit in the freezer happily until you need them. Choose whatever fruit is available - mandarins, tangerines or clementines are all delicious, oranges work very well and lemons can be done the same way, just by adding rather more sugar to taste.

Jane Grigson calls these mandarines givrées and apparently they were all the rage at dinner parties in the late Seventies.

Recipe for Tangerine Ice

20 small tangerines (or 10 oranges)

juice of half a lemon

100ml/ 3floz/ ½ cup water

icing sugar

Syrup

250g/8oz/1 cup sugar

150 ml/5 fl oz/2/3 cup water

juice of ¼ lemon

Make the syrup by heating the three ingredients over a low heat until the sugar has dissolved. Bring to the boil and boil for 2-3 minutes. Leave to cool.

Grate the zest from half the tangerines or oranges and squeeze the juice. Cut the remaining fruit, horizontally near the top, so they each have a lid. Scoop out the flesh with a small spoon and press out the juice (I used a sieve to do this). The skins must be left in good shape, but as long as they aren't holed you can stuff them back into roundness with the sorbet. You should end up with about 3 cups of juice altogether.

Add the grated zest, lemon juice and water to the juice, then taste to see if you need any of the icing sugar. If you over sweeten, you can add a bit more lemon juice to sharpen the flavour again. Remember that frozen ices need more sugar to bring across the flavour than when they are at room temperature, so go for the sweeter end of your taste range when adding sugar. Freeze this in a plastic container. I usually take it out after a couple of hours to beat it with a fork, then freeze again until it is firm.

Scoop all the leftover pulp from the shells so they are clean inside. Chill them and when the sorbet has set quite firm, (but before it is rock hard) beat it again and scoop it into each shell, packing it down quite firmly. Replace the lids, wrap the whole fruit in cling film and freeze again until needed.

I made these for a dinner party and served a rich and intense chocolate cake alongside them. The combination of flavours was stunning, the perfect finish for an elegant meal. Children love these sorbets too though, so if you can find small clementines make plenty of small sorbets and bring them out for a family lunch.
